poaching eggs??

Have tried a few times... no total fails, but no total successes IMO?? Watched a 2 hour tribute to Julia on public TV yesterday... actually 2 different programs on 2 different channels. She did omelettes and poached eggs in one B&W segment from the 60's. She mentioned that FRESH eggs poach better?!? And if freshness was a possible issue... into simmering water for count of 10, then poached. I have eggs, and butter and lemon in fridge. Thinking of trying her technique and making a batch of Hollandaise. As long as the yolks don't break and are really runny... slathered with HOllandaise can be nothing but a YES!!
