It isn't "popular" here....but still I have seen it and even tasted it. I sometimes like the fruit...like pineapple or apple chunks, or another recipe with dried cranberries in a mayonaise based dressing....but the mini marshmallows and the Kool-Whip based dressing is awful under any circumstances....
In fact mini marshmallows and Kool-Whip are awful any time....especially the rainbow colored ones!

I've never seen that YET! I'm still trying to get over the Caesar salad with some or all iceberg and drowning in dressing and big, soggy croutons, ughh. I also like my fruit just fruit, it can be so beautiful naked, dipping sauce on the side for those NEEDING extra flavoring or calories. Mini marshmallows are a good way of ruining it for me, but I've seen some people just rave about stuff with the minis in it. My mom used to say, people will eat rocks if you put sugar on them. I think that's why I like to see what I'm eating.

Yuck! It sounds like someone mixed up two of Mom's recipes from the 1960's. Fruit salad with mini marshmallows in it is popular with the DH's family. It was originally done to get kids to eat their fruit. It was just fruit and mini marshmallows. With carrots & cabbage? Yuck!

I've never made it, but my DM did, back in the 60's.
It was just cabbage, carrots, pineapple, mini marshmallows and a vinegar dressing. Not one I liked.

PINEAPPLE COLE SLAW

4 c. shredded cabbage
1 c. miniature marshmallows
1 (8 oz.) can crushed pineapple, drained
Miracle Whip salad dressing

Combine cabbage, marshmallows and pineapple. Add enough Miracle Whip to moisten. Toss lightly. Chill

That just sounds discussing.

I suspect that people took the basic recipe that LindaC posted and decided to make it "gourmet" by adding other stuff (different fruit, etc). It is just wrong on so many levels.

It's been a long time since I have been to a potluck. Perhaps I should be grateful. Cabbage and marshmallows? Ya gotta wonder. Cooks.com has numerous versions of cabbage and marshmallow salad so it must have captured the fancy of quite a few cooks. Lime jello, whipped cream, sour cream, peanuts, celery--all make an appearance.

Haven't seen that in a million years. Used to very popular a church potlucks in the farm areas around Chatham along with the requisite Jello salad molds.

I sometimes put fresh pineapple in my coleslaw with a tart piquant horseradish dressing. We love the sweet/piquant combination. But marshmallows? Yuck. We don't even eat them at all.

This thread is making it very hard to eat my breakfast, and I don't even have marshmallows in it! LOL!

"TASTE" is sooooooo individual and so subjective.

My MIL used to make cole slaw by removing all the green outer leaves (and throwing them away) from a head of cabbage, and grinding the white, lifeless cabbage to a pulp in a blender with water in it. She never had enough patience to allow it to drain properly, so the cabbage, and WAY too much water, got tossed into the bowl. Then she drown it with Miracle Whip and cream. Tossed in a package of marshmallows, which floated on the top of the excess water/dressing/cream mixture. My husbands family all thought that was the best stuff ever.... I thought (ah hem) otherwise. It wasn't even a good cream dressing cole slaw. I thought it more like hog slop.

The first time I had a chance to serve cole slaw to the family, I made Carolina Cole Slaw which is made with chopped, not pulvarized, cabbage - green and purple, green pepper, carrot and a little onion), and is dressed with a light vinaigrette dressing (sweetener of choice - sugar/honey/agave nectar/etc., salt, dry mustard, celery seed, high quality vinegar, and vegetable oil), and they all stared at it like it was the devil himself.

If you want to see examples of the most disgusting foods from the past, check out a copy of the book, "The Gallery of Regrettable Food" by James Lileks. What a hoot! Especially for those of us who recognize foods from pot-lucks and church suppers pictured in the book, and recipes in cookbooks and booklets in our collections from the 20's through the early 60's. There's a chapter entitled: FAMOUS CHEFS FORCED TO USE MARSHMALLOWS.

I've also never seen cole slaw with mini marshmallows, or any other kind of marshmallows, nor have I ever had cole slaw with fruit in it, although that doesn't seem quite as egregious. I did, however, see mini packages of marshmallows at the grocery store the other day, packaged for kid's lunches. My girls still love the multi-colored ones.

I like cabbage in nearly any incarnation, including cole slaw both creamy and sweet/sour, although I like the sweet/sour vinegary based ones best. I'd even consider putting fruit into a creamy one.

Marshmallows, though, I save for a couple of uses. I'll eat them toasted over a campfire. I don't want S'mores, I just want the marshmallow and a chunk of chocolate, separately. I also put them in Ann T's Cream Cheese Brandied Cherry candy, and Amanda goes crazy for that stuff.

Jello, now, that's different. I can't eat it, it's too....wiggly. (grin) It's that texture thing that gets me.

I don't mind gefilta fish in a jar....if there is enough red horseradish...and I sort of like a little serving of cole slaw with pineapple, or apples, or dried cranberries.
But don't you be puttin' no carrots nor green peppers into my slaw!!
And for sure no marshmallows, mineature, colored or not.
I did tell y'all about my mother's recipe for the jello salad with the can of soup didn't I???

The local Chinese buffet had mixed fruit salad with mini marshmallows in it. Lately they've separated the marshmallows out. I still sprinkle them over the fruit.

The recipe Linda found, while not up to CF standards of course, doesn't sound all that bad really. I like cole slaw, I like Miracle Whip, I like pineapple...

I've never seen it though. I also like Waldorf salad with mini marshmallows. But no one makes it anymore. Maybe I'll make it for my friends for Labor Day BBQ.

My sister makes a salad (?) of lime jello, cottage cheese, pineapple, and cool whip, Sounds weird but it tastes good at a picnic.

For those of you who were not raised in the dark ages, or who never even drew breath way back in the primordeal soup that first began the organisms called :"jello salads...in those dark days immediatly following WW II, there were many strange and wonderful recipes. Some can be called "classics", those like wilted lettuce salad and Waldorf cake...but certain ones are best forgotten.
I am sure this had a name of some sort...but blessedly it has been forgotten, or lost.
One package of lime jello
2 cups boiling water
1 can of Campbells vegetarian vegetable soup, drained.
3 eggs, hardboiled
Mix the jello with the water, refrigerate until it turns syrupy.
While the Jello is cooling, drain the soup.
Mix the jello and the drained soup, turn into an 8 by 8 dish and halve the eggs and bury cut side up in the jello mix.
Serve in squares on a bed of lettuce, dressed with a dollop of mayonaise, for a refreshing salad suitable for the modern health concious family.

Marshmallows are to be eaten on the end of a wooden skewer, which has been held over the flame of a gas stove (electric would probably work also), until it catches on fire--therefore burning until appropriately black. The blackened marshmallow(s) is then pulled off and eaten, leaving a creamy warm center, that is then held over the flame to blacken again.

I keep wooden skewers next to my stove in a straight tall bud vase and marshmallows in the cupboard close by---just for this purpose. :) I don't think I would care for them in coleslaw.
