Does anyone have this recipe from '80s Victory Garden Cookbook ?

`Help me please????? I am looking for the second recipe by Marian Morash for Zucchini Bread. She had two in this book for the PBS series. I have beautiful zucchini and this is my most favorite. My daughter lent my book to someone who has refused to return it and moved away. Favorite favorite favorite!!

I would be most grateful. Thanks!

Lynn's Spicy Zucchini Bread

3 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
1/2 tsp nutmeg
3 eggs
1 3/4 cups sugar
1 cup vegetable oil
1 1/2 tsp. vanilla
2 cups lightly packed coarsely grated zucchini
1 cup raisins (opt)
3/4 cup nuts (opt)

Sift dry ingred. Beat eggs with sugar, oil, vanilla. Gradually beat in dry ingred. Stir in zucchini, adding nuts and raisins if you like. Divide between 2 greased 9x5-inch loaf pans. Bake preheated 350Â° oven 50-60 minutes.

Stealing cookbooks should be a capital offense.

Dear Carol,

I prayed to Jehovah that there had to be 'someone!!' out there that would understand. Thank you soooo much. I always add nearly a cup of shredded(on the large holes) carrot to it. We bake it in a bundt pan. So very moist. This will be great tomorrow. Again, all my heart in my thanks.

Here ya go Dinkie... Carrot Cake...from page 172 Jenn Aire cookbook 2c all purpose flour Â¾ c granulated sugar Â½ c packed brown sugar 1 tsp. baking soda Â¾ tsp baking powder Â½ tsp. salt 1Â½ tsp. ground cinnamon Â½ tsp. ground allspice Â½ tsp. ground nutmeg Dash of ground cloves 3 eggs 2/3 cup vegetable oil Â½ c. milk 1Â½ tsp. vanilla 1 3/4 c. shredded carrots 3/4 c. chopped walnuts Grease and flour a 13x9 inch baking pan. Set aside. In large mixing bowl combine all ingredients except walnuts. Blend on low speed of electric mixer until moistened. Beat on high speed 1 minute, scraping bowl occasionally. Stir in nuts. Pour into prepared pan. Bake in preheated 325FÂ°( convection oven on rack 3 for 30 to 35 minutes ) or Bake in preheated 350FÂ° radiant bake oven for 35 to 40 minutes or until top springs back when touched lightly. Cool 5 minutes. Loosen edges. Remove from pan. Cool on wire rack. Frost with Cream Cheese Frosting. ( recipe to follow ) Cream Cheese Frosting for Carrot Cake 2Â½ c. confectioner's sugar 3 oz. cream cheese, softened 2 Tbsp. butter or margarine softened 2 to 3 Tbsp. half-and-half or milk Â½ tsp. vanilla In medium mixing bowl combine confectioners sugar,cream cheese, butter, 2 Tbsp half-and-half and vanila. Blend on low speed of electric mixer. Beat on high speed until smooth and creamy. Gradually beat in additional half-and-half ( about 1 Tbsp. ) until frosting reaches desired consistency. Makes about 1 3/4 cups...frosts one 13x9 inch cake.

Barbara, I've done a lot of bread searches, and found some interesting archives, lots of recipes of people's own childhood breads, but no clues about yours. What concerns me is the "My". The following words could actually say something like "Molly Jones shares her mother's famous egg bread." Otherwise, to me it seems more logical that it was your mother who said it, maybe even wrote it in the book. But it could be either way. My BH&G is newer than your mom's, but still old. There's one recipe called Egg Bread: 6.5-7.5 c. AP flour 2 packets ADY (equals 2 cakes fresh yeast, equals 4.5 tsp ADY) 2 c. milk 1/4 c. sugar 1/4 c. butter or margarine [N.B.--it does matter which for the texture, but either will make good bread.] 2 tsp. salt 3 eggs Two loaves, double rise, 375° F. 35-40 min., cover with foil last 15 minutes so it doesn't over brown. This is a very standard enriched bread. If you want a picture of the recipe with full directions let me know.

Sylviatexas, yes, I have eaten mock apple pie that a friend's mother made for an after school treat when I went home with her after school one day about 1955. I had never had it, and if I had not been told, I would have thought it was a slice of apple pie. The Ritz crackers are halved, and the only thing that gives it away is that the edges of the "apples" are scalloped or look like they have been peeled with pinking shears. That was an interesting visit. When my friend introduced me to her mother, her mom gasped and asked if I was Jack ____'s daughter. I replied that I was, and she proceeded to tell me how he was so handsome and she had had a crush on him in their single days. At dinner that night I related this mom's report of my dad. He was tickled to hear that a girl he did not remember from his past remembered him. I have seen pictures of my dad from back then, and he looked like a slender Bert Lancaster.

I believe all the film has been archived at WGBH. They will digitize, for a fee. You'd like to believe that some investor would see to it that they can get circulated. Crockett died a year or so in, and the show metamorphosed somewhat with different hosts and different names. That's a delicious sounding recipe rottenlivia! Carol, you have come to the rescue once again - I agree about stealing cookbooks:-)

If you bake this recipe in a bundt pan, what would be the baking time?

I don't think there was too much difference. I just keep checking it periodically. Hope you enjoy it!

Another good recipe in that book was one for a Vegetable Broth called, 'Nage'. I believe. I have ued it for many things.

You are so welcome. Any true cook can empathize with the desperation when it comes to the loss of much-loved recipes.

That is a great old cookbook. Not as highly-spiced as today's recipes but sound formulas and tons of information on each vegetable. The Nage is great and I like the yogurt dressing. Both make good use of fresh herbs.

I still remember Morash's shows. She was just at the forefront of the whole foods movement.

rottenlivia, I'm glad Carol could come to your rescue. Any of us who have been using a "favorite" recipe for years knows what you were going through. My old cookbooks have Grandma's notations in them, additions to recipes, notes about cooking time. I'd be lost without some of them.

I agree, stealing Grandma's old cookbooks would be more devastating to me than stealing my checkbook!

yeah, annie ... he who steals my check won't get much -- but my computerized cookbooks -- justifable homicide when I catch up with them. I think that's covered under the Patriot Act.

A couple of months ago my computer "broke" due to an automatic update from Windows. (Do I have a bone to pick with Bill Gates!)

Anyway, the whole hard drive had to be re-formatted and when I spoke to the tech the first thing I said was, "Save my recipes!"
