Brown Sugar Chocolate Chip Cookies - Sol

2½ cups AP flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
2 cups light brown sugar, packed
2 large eggs
1 tablespoon vanilla extract
2 cups semisweet chocolate chips
½ cup chopped walnuts, optional

Whisk together the flour, baking soda and salt. In a mixer, cream the butter and sugar until light. Add the eggs, one at a time, beating well after each addition. Add vanilla. On low speed, add the flour mixture, and mix until barely blended. Add chocolate chips and nuts. Drop by tablespoons onto sheet pan and bake in a 350°F oven, for 12-15 minutes.

Somewhere on the web I read the following tips for making all types of toll house cookies. Be brave and try this method. You will be surprised at the difference it makes.

Follow the recipe except...melt the butter before adding to the sugar and creaming the two together. Also, add three tablespoons of vanilla instead of just one.

OH man I'd never lose Sol's recipe. I sleep with that one under my pillow. hee hee!

So why do I want to melt the butter? Will it make them chewier?

I've used melted butter in cookies and I didn't like how they turned out. I do add a lot more vanilla, but not 3 tablespoons, usually about 1 tablespoon. I think it helps.

Sorry about my error in posting above. That should read...3 teaspoons of vanilla!! Can't quite explain how using melted butter in chocolate chip cookies improves the texture, but it does.

I made them, they were wonderful, BUT...I guess I am the odd one out, but I prefer a higher cookie to a flatter cookie, so I prefer using half shortening and half butter, or all shortening, DARFC. They were however, very tasty. Thanks for posting the recipe!

Meredith's roomates have declared this the " best damn cookie on the planet". Meredith claims the boys (very good friends of hers) in the house across the street can smell them in her care packages when they arrive. She says these cookies are great boy catchers! LOL

granjan--On the Good Eats show about making chocolate chip cookies, Alton uses melted butter in the one he calls "The Chewy." The recipe has some other things that set it apart from a standard chocolate chip recipe (bread flour, 1 egg and 1 egg yolk, mostly brown sugar), so I guess melting the butter does indeed help with making chewy cookies. I use the recipe all the time (got a batch chilling as I type) because we prefer chewy cookies.

By the way, my mother's name is Jan. My children call her Gran.
