Great Cuke recipe--finally got it posted

I've been meaning to post this recipe since the cucumber thread started, but between senior moments and trying to keep up with the garden, well...

It's from my favorite vegetarian cookbooks, though I am by no means a vegetarian, Nikki and David Goldbeck's

"American wholefoods Cuisine":

White Gazpacho

2 c. peeled, diced cucumber

1 small clove garlic

1/2 c. parsley

2 TBl. white or cider vinegar

1/2 tsp salt

2 c. yogurt

1/2 c. sour cream

Combine first 5 ingredients and process well. Stir in yogurt and sour cream. Serve very cold.

A great dish on a hot day.
