Well you know me and leftovers. I'd be giving Moe steak and eggs for breakfast if I had a nice piece of very rare steak leftover. I hate steak salads too. You could grill or fry onions and green peppers. make a salsa and guacamole and make fajitas.

I know that I wouldn't freeze it because then it would definitely taste like leftovers to me.

The only kind of leftover steak 'salad' that I love is a Thai beef noodle salad...don't know if you have fish sauce on hand, here is a link to a recipe that looks similar to mine.

Sorry I can't name the source. Nor have I tried it. But one of these days if I ever have steak leftovers I'll be trying this:

Steak and Braised Onions under a Parmesan Crust

1 T butter
1 T olive oil
1 large onion coursely chopped
3 canned, peeled Italian plum tomatoes, seeded and coursely chopped
2 t AP flour
1 cup beef stock
8 ounces cooked beef, 1/2" dice
salt and pepper
pinch of nutmeg
1 T parsley, minced
1 clove garlic, minced
3/4 cup fresh breadcrumbs
2 T parm regg
1 T melted butter

Large pan, butter and olive oil over med-lo heat. Saute onions until very tender, about 10 min. Add tomatoes, cook for a minute. Add flour and stir to form paste. Cook another two minutes. Add stock and increase heat to med-hi. When it just begins to simmer add 1/2 t salt, pepper, nutmeg, parsley, garlic. Cook until thickened, about 5 minutes.

Preheat broiler. Transfer meat mixture to 8 or 9 inch round gratin dish. Mix bread crumbs with melted butter and parm, sprinkle over beef, broil until crisped and brown.

Steak leftovers? Heresy! LOLOLOL

Actually, I usually just make a sandwich with some good strong horseradish and a piece of my homemade dark bread.

How about a "Philly cheesesteak" kind of sandwich? My girls also like it if I slice it up, add BBQ sauce, heat it and put it on a bun.

I do love steak salad, but if you don't...

How about caramelizing a big Vidalia onion, slicing the steak thinly, adding to the onion, adding some garlic, rosemary and gravy (purchased, leftover homemade, or use some beef broth and thicken it with flour or cornstarch) for a hot 'roast beef' sandwich? Alternatively, use the onion, sliced beef, a spoonful of relish and some BBQ sauce for beef bbq. You could freeze the leftovers of either of those.

Dice some of the beef, heat slightly, toss with a little salsa, and taco seasoning and make quesadillas with it on flour tortillas. Add some Mexican cheese and grill.

Vegetable soup. Quick stew--just cube, add veggies, a can of tomatoes--there you go.

If I had the time I'd make "taco" meat. A sauce of tomatoes, cumin, and hot peppers (serreno?). S& black P to taste. Have to cook it long enough to release the cumin oils. Has to be enough tomato acid to keep the steak tender. A minute before done stir in some plain yogurt. Serve on a flour tortilla with a squeeze of lemon juice over the top. Favorite taco toppings if it suits your mood.

The balance of hot peppers and yogurt depends on your taste. If it comes out with more pepper heat then desired it can be dialed down with more yogurt or a spoon of sour cream on top. My serrenos are about eaten up so I'd probably sub some jalapenos from garden or fresh cayenne from my potted houseplant peppers.... no habeneras this year : (

One of my favorite recipes that I make when cooking for a guest. I get lots of "wow" reactions. Familiar enough taste that people know what to expect but different enough to be special. Been making it for 20 some years now so no measures just some and some and some to taste. Tends to be pretty juicy at the start of cooking but so cook it down to a sauce. Good without the sprinkle of lemon juice but not as good. Leftovers fridge well and reheat in the microwave decently. Makes people in the lunchroom at work sit up and ask what I have today.... one of these days I'll have to do it for a potluck dinner.

Ummmmmm fry up some potatoes, onions and garlic and add the steak to it. Sit in front of the computer with a big bowl of that and read n eat!

Thinking I'll do sort of what Lyra suggested....but with my own twist....steak and a home made salsa fresca on a tortilla topped with lettuce, chopped onions shredded cheese and maybe some sour cream!
Then for the rest.... a pseudo French dip on a hunk of toasted sour dough bread.

I just discovered frying tortillas-- have you tried it? You need oil at least a couple of inches deep, stick the tortilla in and hold it under the oil with tongs, until it's starting to stiffen, but still bendable, then fold it into a taco shape and stick the fold back into the oil until it stiffens more, then fry one side at a time until the taco shell holds its shape. I thought I didn't like hard tacos, but it's soooo much better than that packaged junk. And it's reeeeally good with leftover rare steak :-)

And....if you cut that tortilla into wedges before you fry it, you have chips!
yes....I knew about frying them because you haven't always been able to buy packged taco shells.

Some of us not only fry our own taco shells, we make our own tortillas!

I cut up left over steak, chicken etc into small bite size pieces, mix with onions, and then with rice (cooked) noodles(cooked), and have been known to add olives, grated cheese, different flavorings. Pan fry all sometimes will even add eggs, depends on what I have left over. Even certain veggies. I call it creative cookings. For the liquid part as this can be on the dry side, sometimes a milk base product, some times a meat base product.

Annie, I'm laughing. That Ann, she sets the bar too high!! I tried and failed once. I've contemplated trying to roll them out in the pasta maker. I seem to be just constitutionally incapable of rolling out dough. I successfully made some turnover dough the other day and startled myself when it formed a circle and didn't tear. I was so taken aback that I stopped rolling and stared at it and wondered what was going on.

How about beef strognaoff?
1 can of cream of mushroom soup, 1 cup of sour cream, 1 stalk of thinly slice celery, one small diced onion and mushrooms. cut steak into cubes, saute vegs. in butter or oil, add beef, sour cream and mushroom soup heat until warm. serve over egg noodles.

I had some leftover grilled med-rare tri tip..I chopped it small and put it in my Vietnamese Spring Rolls...OH MY GOODNESS!

I made fajitas with some left over steak and some peppers and onions and tomato from the garden.

I sautee onions and peppers and then make a Philly cheese steak quesadilla with muenster cheese.Or a Philly cheese steak panini. Or steak burritos.

I love it when I have leftover steak.

Jessica, I've actually made my own tortillas and was trying hard to make them perfectly round, like the ones in the package, when my brain kicked into gear and I realized that they are actually cut out of sheets of dough like cookies and therefore are always perfectly round. LOL

Pastry and dough are acquired skills, it'll all come together with practice. Oh, and congratulations on the finally successful turnover dough!
