I love to cube up a potato and onion in olive oil and when the potatoes are tender add the cubed left over beef. Ummm!

Leftover pork roast always gets reinvented around here into posole.

I sometimes make slumgullion out of leftover beef roast.
Slice it thin and put it into a pan with whatever gravy is leftover...add some tomato puree...I can't tell you how much because I don't know who much meat you have....and somes hreddec chedder cheese....heat until melted ands erve over either the leftover mashed potatoes or slices of French bread toasted.
or make roast beef hash....grind up the leftover beef with any leftover potatoes, some onion, or if there are no potatoes left, cook a couple in the micro and grind them up....put the whole mess into a frypanw ith a bit of oil int he bottom and cook until browned on ones ide....flip onto a plate, cooked side up and turn into the pana gain and brown the other side...
Cook the leftovers up with some BBQ sauce and make pulled beef sandwiches.

and thes ame goes for leftover pork....but I like to add as tir fry to the list.

I just made beef stew out of a left over roast.

Same as Shaun.... we call it hash. Peel and cube potatoes and cook in skillet a little oil til almost tender then add the cubed roast. Cook til potatoes are brown and done. We've always served it with ketchup! Great comfort food!

I'm the odd one out here. I really don't like left over roast beef or pork recooked. I do love hot pork or hot roast beef sandwiches served with homemade fries. Diner food. Leftover rare roast beef makes wonderful beef dip sandwiches.

I love thinly-sliced cold steak or roast (must be red/pink, not well-done), sprinkled with S&P, maybe dipped in some horseradish sauce. All by itself or atop a simple salad dressed lightly in balsamic vinaigrette.

Here is a favorite recipe to use that last little bit of pork roast:

Chinese Pork and Rice

2 TB butter
2/3 cup uncooked long grain rice
1 t. salt
1 large onion
2 ribs of celery
1 green bell pepper
1 cup (or more) chopped leftover pork
1 1/2 cups boiling water
1 beef bouillon cube
2 t. soy sauce (or more if you like a stronger soy flavor)

Melt butter in a heavy skillet. Add uncooked rice, season with salt. Stirring occasionally, cook rice until it turns golden.

Cut the onion and celery into thin slices and the bell pepper into then strips. Cube the leftover pork in small pieces. Add onions to rice and cook several minutes, then pour in the boiling water in which the bouillon cube has been dissolved. Cover tightly and cook about 20 minutes until the rice is tender.

Add in green pepper, celery, and pork. Cover pan and place over a warm spot on the stove for 10 minutes or more until the vegetables are tender but still a little crisp. Just before serving, stir in the soy sauce. Serves 4 but reheats nicely in the microwave for another dinner or lunch.

I'm not a roast beef person but I do love my roast pork!

I'm only happy with leftover beef or pork as a hot or cold sandwich. I don't like it morphed into another dish.

An exception would be a Shepherd's Pie made with leftover beef but it has to be ground up fine not chunks.

I use frozen puff pastry to make pasties (pronounced "past ease"). Google that one once and you get a few different things!

The traditional Cornish pasty is filled with diced beef, sliced potato and onion and baked. I also add carrots.

Wow! Thanks everyone! All these ideas will give me something to work on. My Mom used to make "Hash", sometimes it was good and sometimes not. Thank You again!

When I was a kid my mom would sometimes make a sandwich spread out of leftover roast beef. She would grind the beef, add mayo, chopped sweet pickles and celery (and a little sugar and vinegar). I still like this and make it now and then.

An easy pilaf can be made with leftover roast beef:

brown some chopped onion in butter in a pot with a lid
add regular or brown rice and brown a few minutes
add beef or chicken stock in the amount needed for the rice
put lid on and cook until rice is done
stir in diced leftover roast beef, put lid on pot and let it sit 10 minutes to heat up the beef.

I forgot this recipe for leftover beef. As I say I don't like beef much and I sure don't like it morphed but I found this the exception. It's really good!

Orange-Glazed Crispy Beef - Ricardo (FoodNTV)

For the Beef

250 ml (1 cup) unbleached all purpose flour
125 ml (1/2 cup) tapioca starch or cornstarch
15 ml (1 tablespoon) sugar
1/2 ml (1/2 teaspoon) salt
180 ml (3/4 cup) lager or pale ale (could use club soda)
125 ml (1/2 cup) water
454 g (1 lb) cold leftover roast beef cut into strips
60 ml (1/4 cup) tapioca starch or
cornstarch
Oil for frying

For the Sauce

60 ml (1/4 cup) soy sauce
10 ml (2 teaspoons) tapioca starch
125 ml (1/2 cup) sugar
30 ml (2 tablespoons) rice vinegar
3 cloves garlic minced
Grated zest of 2 oranges
15 ml (1 tablespoon) chopped fresh ginger
1 ml (1/4 teaspoon) hot pepper flakes or cayenne
Juice of 2 oranges

Directions:
For the Batter

1. Heat the oil to high in a deep sauce pan or fryer. Preheat the oven to 100C (200F). Line a baking sheet with paper towels.~
2. In a bowl, combine all the dry ingredients. Add the liquid ingredients, whisking until the batter is smooth. Set aside.
3. In another bowl, combine the beef and the starch.~
4. Divide the beef strips into 5 equal portions. Coat 1 portion with batter. Drop the battered strips 1 by 1 into fryer to prevent them from sticking together. Fry for 2 to 3 minutes. Drain, transfer to the baking sheet and keep warm in the oven. Repeat for the remaining portions.

For the Sauce

1. In a bowl, combine the soy sauce and the starch. Set aside.
2. In a large skillet or wok, bring the sugar, vinegar,garlic, orange zest, ginger and hot pepper flakes to a boil. Simmer until the sugar begins turning gold. Add the orange juice and simmer for 1 minute.
3. Add the soy sauce mixture, whisking constantly. Bring to a boil. Off the heat, add the cooked beef strips and turn it gently with a spatula until well coated.
4. Serve immediately.

Chili!... all kinds of leftover stuff disappears in a pot of chili.

BBQ sandwich meat? Chop it up a bit and warm it in your favorite bbq sauce. Serve on toasted bread.

Chop it into scrambled eggs.

Top a pizza.

Drink four beers and eat it cold off the finger and over the sink?

I too cook for two and will plan to have leftovers. Sundays are Roast days when I'll do a large pork, beef, ham, or chicken roast. Then the leftovers get used during the week. The leftover, leftovers also are planned to be used for my wife's lunches since she is still employed outside of the home and need a quicker lunch than me. Our newest favorite is pot pies. I found two very small corning-ware pie dishes at the Goodwill and they are perfect for pot pies. I can make the filling using any of the leftover meats in the freezer.

left over meat usually goes into chili..I keep a baggie in the freezer..and toss in the last bits I couldn't use up for a full meal..so sometimes my "freezer" chili has chicken, several "ways" of beef and pork..
It's always delicious!
