Steak Gravy over Biscuits

While reading the secret cravings thread, someone mentioned bits of meat added to gravy so thin you could eat it like soup.

My daughter's favorite breakfast is one we do after having chicken-fried round steak the night before.

I dice the leftover steak in small pieces. I use the same skillet from the night before with all the bits and pieces of flour and cooked out meat juices and some fat....add enough butter to make a roux. Make a milk gravy from that. Cook slowly scraping all the goodies from the bottom of the skillet. Toss in the steak bits. Heat thoroughly.

Serve over opened biscuits hot from the oven.

I must admit I love it too.

Leftover fried chicken is great for breakfast.

I put the pieces in milk gravy, reheat, and serve with biscuits. Yumo!

I thought all leftover fried chicken was eaten as 3:00 am snacks - while scanning for any new posts on the cooking forum.

I have to agree with annie1992 on this one. A good steak, perfectly cooked (rare), Needs nothing but a bit of salt & pepper. But here is a recipe I found here on the CF Quite a long time ago. Sorry, I don't know who originally posted it, I didn't keep that info. Baked Onions For each medium onion: 1 Tablespoon worchestershire sauce 1 Tablespoon soy sauce (low sodium works fine) 1 Tablespoon butter Tony Cachere's to taste (or use half of a bouillion cube in place of the worchestershire & soy sauces) Peel the onion. Cut off the top. Cut the root end off leaving enough to keep the onion intact. Vertically slice the onion into 8 wedges, but do not slice all the way through. Place onion in an individual ovenproof dish or on large square of foil. Pour the worchestershire sauce and soy sauce over the top of the onion. Lay the piece of butter on the top of the onion. Sprinkle with Tony Cachere's to taste. Cover dish with foil or wrap onion tightly in foil. Bake at 350 degrees for one hour. Fabulous with steaks...and don't forget to dip your steak in the juice! Note: I usually do them in the microwave, Using my microwave's "Fresh Vegetable" setting. They would probably do well wrapped in foil, and cooked on a grill, too. Rusty

i've made sausage grav by crumbling pork sausage,rendering the fat(discard some if too much)cooking the flour in the remaining and add warmed milk...i never measure... was so dissapointed when we went for chicken dinner in frankenmuth mi, and they had canned gravy!

One of my cookbooks, Baking with Julia, by Dorie Greenspan, recommends that when making pastry dough or biscuits, you mix until you think it's almost mixed, and stop. Here's what Dorie Greenspan says about mixing biscuit dough. "To have a good biscuit hand is to have a light touch and restraint - a biscuit dough is so soft that it invites poking and prodding, kneading and mashing, when it should be just barely worked. The golden rule with biscuits is to stop doing whatever you're doing to them two beats before you have to. So, when you're rubbing the shorteniing and flour together and there are still some chubby chunks of shortening - stop. When you're tossing the flour-and-butter mixture with the milk and the dough looks only just moistened - stop. And when you turn the dough out onto the counter and knead it just to work it into a mass, count each knead, get to ten, and - stop." When I read this, my light bulb turned on. I knew biscuits shouldn't be over mixed, but something about the way she worded it clicked with me, and my biscuits have been better ever since, whether I use her recipe or a different one. Well, don't I feel young and naive :-/ Annie, I'm laughing. That Ann, she sets the bar too high!! I tried and failed once. I've contemplated trying to roll them out in the pasta maker. I seem to be just constitutionally incapable of rolling out dough. I successfully made some turnover dough the other day and startled myself when it formed a circle and didn't tear. I was so taken aback that I stopped rolling and stared at it and wondered what was going on.

Hard to limit it to leftover fried chicken though... I would make any leftover that can be eaten with the left hand only (to prevent getting food debris on the mouse, if you are right-handed) fair game to be knoshed at 3:00 AM when perusing the CF, or harvesting crops on Farmville or playing a late night game of Scrabble online. Bonus points if you can include more than 2 food groups.

This is making me dizzy. I am reading about chicken fried steak and suddenly I'm reading about fried chicken. Then I wonder if it's just me and I have to read it all again. In a steak thread is fried chicken OT?

Oh, well. At my age I'm easily confused. :-)

It's all about the gravy Jim! Yummm!!

This has created a delima. I was going to make cheddar garlic biscuits in the morning and I'm not sure if gravy would go... Decisions, decisions..
