Brain Dead.....

I am doing lunch tomorrow for the funeral of the husband of a long time friend....both he and his wife spent their life in this town and have been very active in many organizations. She wanted a cold lunch, so I am making chicken salad and shaved ham sandwiches and a marinated veggie and pasta casserole and a big bowl of cut up fruit. I have very little idea about how many to ecpect so I have planned for about 90 chicken salad sandwiches and about 100 ham sandwiches and will cook extra pasta and stretch the salad if need be.

BUT....this morning I just heard that a pillar of our church and also of our community died last night...he was 94 I think....so here we go again!!

Probably expecting 120 or so for that lunch.....and I'm not sure if I can face a bunch of chicken breasts to be cooked so soon....

Any other ideas? Wonder if I could make veggie fritattas in a 9 by 13 for that many people?
