Antipasti Platter...good idea?

Annual girl's canoe trip is in less than 3 weeks. We got together to plan menus last week, and for my team's contribution we want to do something that does not contain bread.

One group is doing grilled burgers for dinner and another group is doing sandwiches for lunch.

Our group decided on Taco Salad for our dinner, and we are also responsible for a lunch.

Being lunch will be taken in canoes on the river and we'll have no room to transport lots of dishes and/or utensils I came up with the idea of an antipasti lunch. We can use wooden picks for serving and then they can go into the campfire when we return to camp.

Here are some of the items I came up with to include. Let me know if you can think of any others. I know either pepperoncini or roasted peppers are often part of an antiapsti, but we'll forego those for this bunch. I know this isn't a traditional selection, but it's gotta work for keeping cold in a cooleer and eating on a sandbar!

Cold, peeled shrimp (cocktail sauce?)

Salami

Cheese cubes

cherry tomatoes

black and/or green olives

steamed asparagus or green beans

artichoke hearts

bagel chips

pickles

roasted almonds or mixed nuts

Thinking we could toss the salami, cheese and vegetables with some vinaigrette and put them in a bowl together. The shrimp would be served separately as would the bagel chips, pickles and nuts.

I think this mgiht make for a nice light afternoon meal. What do you all think? Anything I missed or should rethink?
