What to do with Salmon

I have some individually packaged Salmon, Alaskan Wild with the skin on. I really like it cooked pan-seared where it is a little crunchy on the outside. I recently switched from the Atlantic Salmon with no skin because of what I read on Seafood Watch. My question is, how do you cook with the skin on? I've been using olive oil and seasoning both sides of the fish, and cooking skin side down. Then I flip the fish, and scrape off the skin. Then I season the fish again, and flip it again. It has been a bit more gamey (not sure if that could be overcooked), but I'm not sure if that is because I swichted types of fish. It always turned out good before with just one flip. Also looking for a salmon pasta with a butter sauce? Broccoli, Asparagus?? I'm getting hungry now :)
