long narrow kitchen lighting help needed

I'm in the final stages of planning my kitchen remodel and one of the driving forces behind the remodel is the poor lighting in my current kitchen. Part of my challenge is that my kitchen is narrow and long. I don't want the lighting to seem like a runway, but I really want decent lighting. My layout is below. Another challenge is I'll be using open shelving for a lot of the uppers which means no undercabinet type lighting. I need to light the counters well with recessed lighting. Over the table area, I will use a couple of pendant type fixtures.

I've been trying to read about recessed lighting on this and many other sources and I have to admit to being completely confused. This kitchen is DIY project so I don't have a lighting contractor to ask. I was thinking of using the 5" Juno cans with wheat haze alzak trim. Bulbs? Spacing and placement? Other suggestions? Kitchen is on southwest corner so it tends to get hot.
