crisis brownie advice

Sorry, i always seem to ask for help when it's a crisis (time crunch really).

I am making turtle brownies for a fundraiser (to eat, not to sell). Instead of making from scratch which I always do (Baker's One Bowl Brownies) I took a friend's recommendation and purchased Ghirardelli brownie mix from Costco. There are 6 pouches for a yield of 96 brownies and I am going to make them all. So for 48 brownies it's 3 pouches baked in a 16 x 12 half sheet pan. Perfect! Except I just realized that my new, commercial 1/2 sheet pans aren't really that, they are jelly roll pans...1" instead of 2"deep.

The directions say you can bake 2 pouches in a 13x 9' pan for 24 "extra thick" brownies. I want more brownies, not thick ones. I have 3 of those pans so could do more batches but waaaahh, I want to do only 2 batches.

Do you think my nice deep jelly roll pans would work or should I just use the 9x13 and maybe do 3 batches with not quite so much batter (so not extra thick) and maybe an 8x8 batch with the excess?

thanks for any opinions/expertise you can give.

Oh, and it calls for oil - I always use butter. Think I can sub part of the oil for butter and get a richer product?
