Got a Nesco roaster

I was at a consignment store & spotted a 6 qt Nesco for $15. I know everyone here loves them, so I got it. Apparently the previous owner didn't care for it, it is pristine, not a scratch or nick anywhere. The manual/recipe book is dated 2001, so I guess it is about 10 years old. It came with a recipe book, but I was wondering if anyone had a recipe or suggestion for a first meal to cook in it.
