Yo! NESCO Roaster Owners! Got a Question

I have the 6qt. Roaster and I LOVE that thing! I've only used it as a slow cooker and haven't been disappointed yet!!Now I'm wondering can I cook biscuits in it? I'm fixing fried salmon patties for supper and I want biscuits with them. I refuse to turn the oven on and heat up the house. I"ll do without biscits!

If I can cook the biscuits in the roaster, should I put them in something and sit that in the cookwell...or can I just put the biscuits in the bottome of it? What temp?

Yes you can....I bake everything in mine that you would in regular oven...biscuits, cookies,corn bread and my turkey at holidays...and same temp...love mine ...Mary

I love mine too, I have the 18 quart and the 6 quart, and I do everything in mine that I do in the oven, even Boston Brown Bread and I've baked brownies in mine when my oven was on the fritz. I roast the bones and vegetables for stock right in the roaster and then add the water and seasonings and let it go, everything done in one pot. I've posted pictures of roast chicken on WFD and the skin was as brown and crispy as I get in the oven. And mine has vents, but you can close them. However, as cynic mentioned, it may be more efficient to do the browning on the stovetop. Not necessary, but perhaps quicker. And, as cynic has suggested before, the small ones make great crockpots, my 6 quart even has a temperature setting for "slow cooking". I use the big one several times per year and I'll roast the prime rib in it tomorrow. The small one gets used at least a couple of times a week, and Elery liked it so much he bought one for his house. Far more efficient than turning on the oven for roasting one small chicken for myself, or baking a small amount of beans all day. I also do huge batches of apple butter and tomato sauce in mine for canning, just leave the lid ajar so that it cooks down, and because they heat up the sides too, you don't have the scorching issue or the spattering that I have on top of the stove. When I read this my light bulb started to flicker and I thought, hey, I wonder... but... I see a problem or two. The heat is applied more indirectly and from the sides. Using a Weber kettle or something for smoking and a stovetop smoker you apply the heat to the bottom to start and keep the wood smoking. I don't really see a simple way to keep the heat on the wood to keep it going short of adding another appliance to the mix or putting in some charcoal or something. As lindac mentioned you could start the wood elsewhere and put it in there but how long would it last? I wouldn't think too long since there isn't really the airflow you would get in a smoker, kettle grill or the like. I could be missing something but I think there's better options for smoking. Although, I guess you could fasten the pouches to the side of the roaster so the heat is applied there. Even just hang the foil out of the top and let the lid hold it in. Wet the wood and it would be against the side where the heat comes in, although I think the heat would have to be set a bit higher to "cook the wood" enough to smoke, wouldn't it? Hmmm. Maybe.... just maybe.....

Unless they changed it since I bought mine, the fan unit, hence operation, was the same on the 6, 12 and 18 quart units. At the time I got mine, there was no fan available for the 4 or 5 quart units.

Thanks plllog.........For now and to the near future, we go elsewhere for Thanksgiving. For Christmas I only have 4-5 people and we have a standing rib roast and a tofurkey. Your idea of using it for a warming oven is a good idea. Do you know if a 9x13 pan would fit into the 12 qt? Seems like the 12 qt are only available online, so I can't go somewhere and actually look at it. I suppose I could order it online from a nearby store and return it if it's not what I wanted......but I'd rather guess right the first time. I'm so used to using the stovetop and the oven, it's hard for me to think in terms of anything besides those. Initially, I mostly wanted it for a second oven. At Thanksgiving and/or Christmas, my DD is a vegan and she likes to make her own stuff......which means I have to work around her with our non-vegan stuff, and really need a second oven. I'm just having a hard time picturing the size of each of them. But I would like one that fits a 9x13 dish, and also could keep a few smaller things warm. Sorry if I'm being so anal. hahaha I order lots of things online, and I can't feel/see them like I can in the stores. Thanks for your help!

I do too, CB, and it is getting a workout! I use my big one as a portable oven during these hot spells, it is wonderful! If it weren't for that and the electric pressure cooker out on the patio I don't know what we would be eating!

How many do you want to make? My only caution is that you can't put too many in there. Size will be your limiter. However you can stack them I guess, just raise up the rack or if you have the Roast-Air rack it might be high enough by itself for the second layer.

Keep in mind the heat comes from the sides so if you have the biscuits against the cookwell they'll cook faster than in the middle and might burn. I've made tube biscuits in there before though. It worked. I think I rearranged them a time or two though to even the baking.

A bread pan would probably help for evening the heat.

I only fixed 6 biscuits, but I ended up cooking them in the oven, because there wasn't room in the 6qt. roaster.So if you heard the temps in Alabama wet up a few degrees yesterday about 6pm...that's why!

I do have a 18qt. roaster, but it isn't a NESCO. I only use it twice a year..Thanksgiving and Christmas!

Did I mention that I LOVE my Nesco Roaster!
