It's "that" time of the year. I would serve sliced tomatoes and sliced cucumbers and sweet onions.
And perhaps add a fresh corn relish sort of thing.

i have done watermelon and feta salad with summer rolls. Very different cuisines but both are light, summery and fresh, and I use fresh herbs in both. Went over well.

I made this salad a few nights ago ~ it was delicious!
I used what I had on hand - fresh quartered cherry tomatoes from my patio plant, and sweet onion, and fresh basil, also from my plant. I served it on a dark romaine leaf on each chilled plate. I can only imagine how good this dish is made with red onion, and heirloom tomatoes! Use a good quality olive oil. I omitted the salt for health / heart reasons.

Ingredients:

4 medium ripe tomatoes, sliced
1/4 cup red onion, chopped
2 tbsp extra virgin olive oil
8 kalamata olives
fresh basil, sliced
kosher salt and fresh pepper

Directions:

In a bowl combine onions, olive oil, salt and pepper. Let it marinate about 5-10 minutes. Slice the tomatoes and arrange on a plate. Pour olive oil and onions on top and season with additional salt and pepper. Top with fresh basil. Divide equally in 4 plates.

Last weekend I served them with an Asian coleslaw...finely shredded (sliced) green and purple cabbage, green onion, finely sliced red bell pepper, shredded carrot and cilantro and dressed with (I had to increase the amounts of this dressing, but in this proportion):

Asian Cole Slaw dressing
1.5 tsp canola oil
1.5 tsp sesame oil
1 T rice vinegar
2 tsp soy sauce
1 lime, juiced
1/2 tsp sugar
1/4 tsp red pepper flakes
