Salsa ???

This weekend is dear buddy Gregs Welcome Home open house.

His wife, my dear friend kicked aroubd several party options and decided an open house would work best.

Everyone is asked to bring a dish, snack or dessert.

Its supposed to be high 90's so I quess I'll make some homemade salsa and tortilla chips. Greg loves my basic salsa so its a done deal.

The trouble is here on the east coast I cannot get decent tomatoes!! The tomatoes at the market are mealy and flavorless. I have been scouting produce markets but they all seem to have the same terrible tomatoes.

If I settle for these no so hot tomatoes, is there anything I can do here at home to improve the flavor??

Can anyone recomend a decent canned product??

I really wish I hadn't commited to making salsa...!!

I am open to all ideas!!!

I make a durned good salsa out of canned tomatoes...
Buy canned tomatoes, the cheaper the better, not those packed in puree, just supermarket brand canned whole tomatoes.
Drain, cut out any hard green spots or cores, and chop, then add the chopped green onion the chopped garlic, cilantro, green chiles, jalapenos, lime juice, wine vinegar, salt ground red dried chiles...whatever.
It's not quite salsa cruda...but it's not cooked salsa either.

Susie you are in the Philly area correct? Are you with in a reasonable distance to Buck's Cty? Tanners Farmer's Market alwyas has great tomatoes. It's down the street from my mom and I go there whenever I'm back for a visit! I can give you directions if you need them. Also, lately I have taken up a new hobby, making salsa! I use plum tomatoes and remove the seeds and membranes. I also add a good organic fire-roasted can tomato to give it more substance! Hope this helps. Gina

Tadpole's Salsa 28.8 oz can whole tomatoes 6 oz. can pickled jalapenos, seeded (or about 6 large) 1 or 2 cloves garlic 1/2 tsp. lime juice salt and pepper to taste Puree garlic in food processor until minced. Follow with the remainder of the ingredients and process until fairly smooth. That's it!!!

Cobb salad originated at the Brown Derby restaurant in Los Angeles. It was named after the owner so there can be no confusion. It's a specific thing, though, of course, there's drift. There should be a bed of mixed iceberg, romaine, endive and watercress, but this is often abbreviated to just lettuce. The top is covered with sections of ingredients including chicken, eggs, bacon, Roquefort cheese or blue, and a couple others , commonly served as stripes on an oval chop plate, but orignally, IIRC, less precisely in a round dish. Never in a bowl. There is also a specific vinaigrette style dressing, but in restaurant service that has morphed to a creamy blue cheese dressing when blue cheese became expensive. To be called a Cobb, even with drift, you must have the areas (stripes) of toppings on the lettuce base. The “chopped salad“ is also from Los Angeles and is entirely different, though the Cobb toppings are diced. The origins were simpler, but the chopped salad became a Thing at upscale Itaian restaurants, and combined standard salad ingredients with the meats (especially salami) and cheeses from a typical antipasto charcuterie plate. There's enough fat that it doesn't need salad dressing, and is often served with an acidic vinaigrette, or lemon wedges, to brighten it up. In a chopped salad all the ingredients are chopped to the same size and mixed together. The emphasis is that you get eveything in every bite without working at it. Cesar’s salad is also a specific thing, from a restaurant in Tijuana, and named after the maitre d’ or owner depending on who is telling the tale. There is extensive drift in ingredients from the original, but the commonly accepted version for decades had romaine, raw eggs, lime or lemon juice, worcestershire sauce, anchovies, grated parmesan cheese and croutons, and some less specific ingredients, such as oil, etc. During a massive lettuce crop fail, during which iceberg was sometimes unattainable and very dear if you could get it, but romaine was plentiful and reasonably priced (it had previously cost a lot more), restaurants started pushing small ”cesar salads” as sides for dinner. Previously, they'd been an entree (main meal) dish in fancy glory. The side version put more and more of the flavor ingredients in the dressing, until it was reduced to romaine, parm and croutons, and whatever dressing you wanted. This was really simple and cheap to make, even with the cheese, so they kept pushing it after the crisis, and the relative price of romaine stayed low because of increased demand (they planted more). Sometime in there, they also bred some of the harshness out of the flavor of romaine, which was known for bitterness. So, once they'd trained diners to accept this new stripped down ”cesar”, they started building it up again with new ingredients and dressings, like the ”Southwest Cesar”, which has very little in common with an actual cesar salad, to the point where ”cesar” nowadays means salad built on a bed of romaine.

Different kinds of salsa tend to go well with eggs, not just egg concoctions with quasi-Mexican ingredients. My favorite breakfast café (which we haven't been to in a while) always offers home made salsa fresca with egg dishes of any kind, even French style omelets. There's also what I think is a West Coast local bottled product, the name of which I don't remember, that is delicious (not just hot) that I discovered not too long ago in SoCal that also goes well with eggs. I tend to prefer fresh rather than bottled salsa, a variety of which are easy enough to find in my area. It's huevos rancheros, not heuvos

You are just going to sub the 1 1/2 cups of peppers with 1 1/2 cups of tomatoes? It's not been tested and no one can guarantee the safety, but it's a swap that I'd be comfortable with. Be sure the mangoes are green/unripe, though. Unripe mangoes have a pH of approximately 4.1, quite a bit more acidic than ripe mango, with a pH of closer to 5.9. Annie

I grew up in Bucks County...lower bucks-Bensalem to be exact.
I will be at Moms on Friday afternoon but she usually shy's away from traveling too far. Maybe after I drop her off but usually farmers markets are done by late afternoon.

It may have to be a canned tomato salsa this time only I will promise a REAL batch once the good tomatoes start rolling in.

I don't think there is anything to make a mealy tomato taste good:)

If I were to use a canned tomato to make salsa (and I have done it in the winter), I use Original Rotel Diced tomatoes with Green Chilies. Nice kick to them along with a little olive oil, cilantro, garlic, etc.

I do a darned good salsa from canned diced tomatoes. Whatever brand is on sale - and not in puree - gets to go home with me. They work just fine - I add my own stuff from there. One time I tried a brand of canned diced tomatoes and green chilies, but it was discontinued and none of the other brands tasted quite right.

Susie, I was born and raised in Southampton! Small world! Tanner's is always stocked, they have other things besides produces and veggies!! The best ice cream around! I believe they are open to 7 PM daily! Good luck, Gina

I love Rotel tomatoes and chilis but believe them when they say they're HOT. Aside from those I think Muir Glen is a pretty good brand.

I was also going to suggest Muir Glen, especially the fire-roasted ones. They add a really nice flavor to off-season salsa! --Gina

I like Red Gold and Rotel but I think any brand would be fine. In fact, I think the canned tomatoes nowadays often taste better than fresh ones.

Here's a link for my favorite salsa. I use RED onion and add an extra can of tomatoes. I also use a bottled dressing called Hendrickson's. It's awesome! You don't even need chips; some people I know just eat it with a fork.

I am probably too late for this post, but I will throw my salsa in the mix:

2 mangos, diced
2 oranges, diced
1 green apple, diced
1 pint raspberries (or frozen)
2 nectarines, diced
2 jalapenos, or to taste (I use gloves to remove the seeds and membrane, which is where the "heat" is)
1/2 red onion, diced (you can use any onion really)
cilantro, to taste
pinch of salt
2 pinches sugar
sometimes I add diced avocado and/or tomatoes to it

You can put any fruits in it you like. People tear this salsa up, whenever I make it.
