corn on the cob recipe

I am usually a purist when it comes to corn on the cob. To me even butter and salt are a sin on perfectly steamed local corn. But I tried this Cooks Illustrated recipe over the weekend and loved it. I am pretty sure I remember the recipe exactly:

Mexican Street Corn

6 ears of corn, husked

Olive oil

1/2 cup mayo

Tbsp lime juice

tsp chili powder

1/4 tsp salt

1 clove garlic, minced

Tbsp cilantro, minced

1 oz queso fresco (I used farmer cheese - their recommended sub)

Lime wedges for serving

Brush corn with olive oil.

Broil 5" from broiler element until spotty brown, about 10 min.

Flip and broil another 10 minutes

Meanwhile mix mayo, chili powder, salt, garlic, lime juice, cilantro. Stir in cheese.

Brush mayo mixture all over corn and return to broiler for another minute.

Serve with lime wedges.
