Comments (4)WONDERFUL PEACH COBBLER (serves 8) 8 cups sliced fresh peaches (4-5 lbs) 2 cups sugar 3 TBL flour 1/2 tsp nutmeg 1 1/4 tsp almond extract 5 1/3 TBL butter Pastry for a double crust pie Combine peaches, sugar, flour & nutmeg in a large saucepan. Let stand 20 minutes until syrup forms. Bring peach mixture to a boil, reduce heat & cook 10 minutes. Remove from heat; blend in almond extract & butter, stirring so the butter melts. Preheat oven to 475°. Butter an 8x12" baking dish. Roll out 1/2 the pastry on a floured surface into an 8x12" rectangle. Spoon 1/2 the peach mixture into the buttered dish; top w/the pastry rectangle. Bake 12 minutes. Spoon the remaining peaches over the baked pastry. Roll out remaining pastry & cut into 1/2" wide strips. Arrange over the peaches in a lattice design. Comments (21)I like biscuit-style cobblers and my favorite peach cobbler recipe is the one in the Silver Palate cookbook. Served warm with vanilla ice cream, it's heaven. Might have to make one, when DD and her BF are around to help us eat it. Peach Cobbler 4 cups peeled and sliced ripe peaches 2/3 cup plus 3 tablespoons granulated sugar 1 teaspoon grated lemon zest 1 tablespoon fresh lemon juice 1/4 teaspoon almond extract 1 1/2 cups unbleached all-purpose flour 1 tablespoon baking powder 1/2 teaspoon salt 1/3 cup vegetable shortening 1 egg, lightly beaten 1/4 cup milk 1. Preheat oven to 400 degrees F. Butter a 2-quart baking dish. 2. Arrange peaches in baking dish. Sprinkle with 2/3 cup sugar, the lemon zest and juice, and almond extract. 3. Bake for 20 minutes. 4. While peaches are baking, sift flour, 1 tablespoon of the remaining sugar, the baking powder, and salt together into a bowl. Cut in shortening until mixture resembles cornmeal. Combine beaten egg and milk and mix into dry ingredients until just combined. 5. Remove peaches from oven and quickly drop dough by large spoonfuls over surface. Comments (9)I love cobblers and here is my tried and true recipe. I use thawed frozen fruit - works fantastic every time. This is an old James Beard recipe. I often make a blackberry cobbler, but last weekend used 1/2 peaches, 1/2 blackberries (thawed, frozen). All peaches would be fine. Put frozen fruit of your choice in a baking dish - I usually use two bags of frozen fruit - about 2 ppounds? Sprinkle with 1 TBSP sugar, 1/2 tsp vanilla, 1/4 tsp each ground nutmeg & cinnamon. Set aside to thaw - this can take a while, so do it early. In a small bowl, mix 1 1/2 cups flour, 1 TBSP baking powder, 1/2 tsp salt, 3 TBSP sugar. Stir dry ingredients together. Melt 1 stick unsalted butter (I use land 'o lakes). Pour butter and ~ 1/3 cup heavy cream (can use milk or buttermilk) into dry ingredients and stir together with a fork until incorporated. Plop pieces of dough topping over the thawed fruit. Sprinkle top with 1-2 tsp of sugar, if desired. Bake at 375 for about 20 minutes until bubbley and the bisquit topping is lightly browned and thoroughly cooked. Comments (23)Minnie, when I make my dump cakes I leave out the butter. Use a cake mix that has NO PUDDING in the mix. Duncan Hines is what I use. I've never made it with peaches, but I make it all the time with pineapple OR mixed fruit. I find that it always works out best by Mix the can of fruit into the cake mix. Pour in to a 9X13 pan and bake ... what ever the box says.. I bake 325 for about an hour. I would think that the smaller the peach bits, the better it would mixl up. I add a can of pineapple to the mix or a can of mixed fruit. I've tried low sugar cherry pie, but it works best when you mix the cake mix with a white soda, pour 3/4 of that into the cake pan, spoon the cherry pie mix over the top and then spoon the remaining cake mix over that and bake. Pour some of the Costco 3 berry mix into a 9 X 13 cake pan. Add a 12 oz can of white pop to cake mix, stir and then pour over top of berries. Bake for an hour or so and makes a great cobbler >> . . . . I bet you could put the peaches on the bottom, then add clear soda to cake mix... (fresca works well) stir and pour over peaches, cook for about an hour or a little less. that sounds good!...See More- 15 years ago
