LOOKING for: What if my peeled peaches are too hard?

I read all the peach cobbler recipes and they all look GREAT! But I guess I'm not too good at picking peaches. I chose 4 large ones, enough for a pie, and one was over-ripe [even had fuzz on the pit] and the rest were under-ripe. They still let go of the pits w/ a little effort, but they're hard. I'm going to chicken out this time and go with a recipe that calls for heating the filling first, hoping that will soften the peaches enough. Last night I set the sliced peaches out at room temp mixed w/ sugar and a little honey, but this a.m. they were no softer [UH-DUH!].

I'll use the "impossible crust" recipe so I don't waste too much time on something inedible. But NEXT year, I'll have all the recipes posted here and choose more wisely!
