mexican beans

Hey! I'm making some quick soft taco type thingies tonight - as it looks like the rain is coming in....just some chicken, cheese, salsa, cheese, lettuce, shredded carrots( and any other veggie I can sneak in there...) and I thought I'd do maybe some black beans on the side.

any suggestions? or recipes? It seems like AnnT has a bean side when she serves mexican....I don't want to fatten them up too much....

I like this easy recipe - we like it without the cheese and I don't mash the beans - same good taste.

Mexican Black Beans
Adapted from Recipe #179877 : 35 min : 15 min prep

Good side dish to a Mexican entree.
SERVES 6

Ingredients

1 tablespoon olive oil
4 garlic cloves, finely chopped
1 large jalapeno, seeded and chopped
1/2 teaspoon ground cumin
2 (15 ounce) cans black beans, rinsed and drained
1 (14 1/2 ounce) can chicken broth
fresh lime juice
fresh cilantro, chopped
1 cup monterey jack cheese
Directions
1Heat oil in heavy large saucepan over medium-high heat.
2Add garlic, chili and cumin and sautÃ© 30 seconds.
3Add beans and broth and cook 5 minutes, stirring occasionally. Coarsely mash beans with potato masher.
4Continue boiling until thick, stirring frequently, about 20 minutes. Season to taste with lime juice, salt and pepper. Transfer to bowl. Sprinkle with cilantro and serve.
5I add the monterey jack cheese on top and microwave for 2 minutes to melt the cheese.

There a great blog on the subject (though pinto beans) called Cooking With El Chavo!. He gives the whole process for real Mexican beans step by step with pictures.

Or you can just boil them up with some onions and herbs.

Hi drscott, I am south of DC and yes, unfortunately , we have seen our fair share and then some of cucumber beetles !! ugh !! I think we have killed well over 200 + of them in the past couple of weeks , they are all over our squash plants, lost of few plants this past week , luckily we planted more than we really needed so we are still harvesting plenty of yellow squash and zucchini. I did not order any beneficial nematodes this year, now I wish I had ! I have never seen them this numerous before.

I was very surprised at the effectiveness of the wasps also, since it was not apparent until the following season when no MBBs showed up. There is hardly a hole in the leaf of any of the beans in the entire community garden, whereas last year it was mass devestation. I am unable to find any MBBs at any stage of growth, adult, eggs or larvae. In the mean time, I suggest rotenone or sevin. They work as a short term solution. BTW, if you use the wasps, pay close attention to the timing of that method. They are most effective when released at the right level of MBB infestation. Jim

Yeah, it's over $100. I try to grow my whole year's worth of beans, so that's how I justified the expense last year. Pediobilus was brought into the country to deal with MBB in FL, in the 70's, and from what I have read it was a super-successful strategy. The season is so long there and MBB was so present (including on weeds) that the wasp was able to spread vast distances and wreaked absolute destruction on MBB (yes!), before cold weather. So for the deep south, and maybe up to the mid-atlantic region, it should be a no-miss weapon. Where I am is a bit marginal, even last year's warm summer it did not do as well as I had hoped. I think that simple rotations and good soil condition are more effective in the long run, for me, and a lot cheaper.

Hamiltongardener-- if you're in Hamilton, Ontario, they will overwinter in your soil. I'm in St. Catharines, and granted, we're a wee bit warmer here....Lake Ontario still gives us both some good warmth before the deep snows fall, adding further protection to the soil. Start feeding finches near your beans. They think MBB are tasty treats. :) The beetles come back every danged year. There's a local company here that sells beneficial insect..I found their prices out of my small backyard garden's range, but I haven't emailed to ask if I can purchase a much lesser quantity for a much lesser fee. And if you want to check out my garden blog, it's at http://cannedam.blogspot.com I blogged these nasty buggies the other day. My control: pick them and drown them in a bowl of soapy water. I've made the recipe Woodie posted a few times andreally like it. I don't mash the beans, either, and have used cheddar in place of the jack cheese, too.

I prefer to melt the cheese under the broiler instead of in the nuker, too.

Stacy, I usually soak beans the night before, either pinto or black beans. And when I cook them, I add a couple of slices of bacon, a couple of garlic cloves and some cumin, cover with chicken broth and simmer until tender.

I usually top them with cheese and salsa.

In a pinch I will use canned beans.

thanks Ann. I did use canned beans, as they were for dinner last night - LOL. And I didn't use the bacon, but that sounds like it would have made a great addition.

They were really good! Thanks for the recipe Woodie. (I am embarassed to say that I think I actually might have asked for the same thing at another time and might already have this recipe tucked somewhere! But I couldn't find one last night...:-)

Stacy3, if the bacon is too fatty you can also use lean cooked ham so you still get that smoky flavor. I do that sometimes instead of the bacon.
