Dairy and Gluten free Pierogi recipe

Anyone have a T&T recipe almost forgot no soy either. Thanks

Hate to be a downer but I can't imagine there even is such a recipe. If there is I'm afraid it would not be very good.

I suppose you could use any recipe you can find for gluten free pasta or maybe you can find a gluten free wonton wrapper.....

As far as the filling goes use a potato/sauerkraut or potato/ onion filling both are good. Use a bit of chicken broth or the potato water to mash the potatoes.

...but honestly some things are just best left out of a diet rather than trying to modify. In my view pierogi is one of them.

I found a number of recipes when I did a search (one at the link below), but it's not anything I make so I couldn't give a T & T recipe.

I agree with chase, there are just some things that don't work well when you start to substitute gluten-free ingredients. A dietary change is often a good time to branch out into new foods and make some new "favorites" rather than trying to recreate old favorites.

Baking gluten-free is a challenge and also expensive. The flours can cost 10 times that of AP flour ($5.50 vs 55c per pound) and many recipes call for ground nuts that start at $8 per pound. I do have a great TNT cookie recipe that uses no flour and has no dairy (casein free): Nancedar GFCF Peanut Butter Cookies Makes about 3 dozen 2 large eggs 1 1/4 C sugar 2 t baking soda 1 t pure vanilla extract Beat together using a stand or hand mixer. 1 C creamy peanut butter 1 C crunchy peanut butter Beat into the bowl with the wet ingredients on low. Do not over mix or they will be grainy. Let sit for 1 hour at room temperature. Use a small scoop to form balls, put on parchment paper covered baking sheets, flatten slightly with crisscross of a fork. Bake in preheated 350F oven for 6 minutes, reverse the sheets, and bake for another 4 to 6 minutes. Let sit on the sheets for 5 minutes then remove to cooling racks. Store airtight (doubled plastic bags). I sometimes add 1/2 C to 3/4 C chocolate chips for Chocolate Chip Peanut Butter cookies but you must check the ingredients list to be sure there are no milk solids if you want them to remain dairy/casein free. The reason I use the Impossible Pumpkin Pie recipe is because that's the recipe I made for years before going gluten-free. Our family preferred the crustless version of pumpkin pie and no one knew or cared if it was gluten-free because it's just like the regular version we enjoyed for eons. I could also double the recipe and bake it in a 9x13" cake pan (or single recipe in an 8x8" or 9x9" pan) and serve the pie in squares, instead of wedges from a round pie dish/plate. When space is a premium in the refrigerator, square/rectangle pans take up less room than rounds. I've found most gluten-free pastry substitutes are either difficult to make, poor quality substitutes, and when they include rice flour, tend to be gritty. Nut pastry can burn easily, but I just plain don't care for any of the g-f pastry recipes I've tried - and they usually mean either increased high-glycemic carbs or a lot of additional fat. Substitutes for Bisquick/Baking Mix. I try to avoid rice flour as much as possible due to the potential for arsenic from rice; and rice flour is found in most gluten-free mixes (as well as commercial g-f products), so I prefer making my own. For one cup baking mix: 1/2 c. almond flour 1/2 c. high-maize resistant starch (available from King Arthur, and larger amounts from Honeyville Grain - you could also use any brand of gluten-free all-purpose flour) 1-1/2 t. baking powder 1/4 t. salt 1 T. coconut oil (softened, not liquid) Thoroughly mix all ingredients until the coconut oil is mixed in. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Baking Mix using Pamela's (Gluten-Free) Baking & Pancake Mix 2-1/2 c. Lets see...I found three recipes. A ginger cookie, an oatmeal-ish, and a spicy chocolate chunk cherry one. Using all three ideas I should come up with something. I don't think I have any 'nut people'. The ginger has the right look. Oats I would have to grind in the spice grinder. I'll post when I come up with something. Might just be adjustable for any needs and substitutions. The ginger is the most promising as 7min for soft and 10 minutes cooking for a crisp.

I so agree however my friend is having a craving and she has been getting hives with a lot of foods lately. I found one with a soy sub but I think she is afraid of the GM soy. Thanks for the link I will pass it along.

It is tough when a diet is restricted and the cravings start. Even if it is a potato covered steamed dough ball, lol. So many options now with rice pastas that actually taste great. I use the Tinkyada brand all the time. I'm the chef during the holidays and have a slew of restrictions to deal with.
(lots of failures) but getting easier with so many bloggers testing and trying. The best thing to google search is a dumpling like a 'pot sticker'. I did attempt a ravioli but it was not so great so i used the Tinkyada rice lasagna noodles and made small rolls and baked like canelloni. Pleased everyone.

Thanks Sleeven I will pass it along. I have lots of time to look for stuff for her. She is busy with 2 adopted children one special needs one bonding issues and both with dietary behavior stuff. Then her own allergies. I can't imagine how hard it must be.

I'm assuming you know what you want to make for fillings and are just looking for a GF dough. I haven't tried this recipe yet, but I'd be tempted to use the King Arthur Flour website GF pasta recipe as the dough for GF pierogi.

Thanks I will pass it along and hope that she can buy that flour here. I think she will be making different fillings for each persons needs. Kids will get potato and onion as they are the dairy restricted. And her hubby will get cheese in his. She was also looking for a pasta recipe. As she has always made her own noodles so that link it perfect.

There are all kinds of gluten-free pasta recipes available on-line, which also include a wide variety of ingredients. I think an investment in a grain mill is a good idea for anyone needing a large variety of gluten-free flours (fresh is best ;-), and many grains (including rice) can be milled in a good-quality coffee/spice mill. Use short- or medium-grain rice for milling rice flour. Long-grain rice flour is fine for dredging or as a thickener, but baking results are better using short- or medium-grain rice (which can also be used for dredging or thickening).

CLB, the standard KAF GF flour blend is also listed as a recipe on their site and I've been using it for years.

Grainlady she has a mill she used to grind her own wheat and other stuff.

Party- That is perfect as we don't always get brand name stuff here Thank you

She just hasn't had much time to surf lately to find new gluten free stuff. She had tried her old recipes switching out for gluten free flours but the noodles etc did not hold together. I was hoping for some tried and true recipes so she wouldn't have more failures.
