crystallized/candied ginger

Four attempts so far to make candied ginger. Several hours of simmering, different sized pieces, and the last time was 15 hrs. on low in the crockpot...all are still too crunchy. I found out March - Sept. is ginger season, so I bought more recently, same results. Has anybody successfully made it where it's tender like store bought?
