Has anyone ever tried Ron Douglas's KFC duplication?
Comments (21)I'm another who's never heard of Ron Douglas. I was reading in a secrets revealed book about KFC. They talked about the cookers. First you cut the chickens into 10 pieces instead of 8 to have consistent sizes. The oil starts hot and there's something like a 5# (or maybe more?) minimum batch that can be made to have it come out right. It is a combo pressure cooker and fryer, once the chicken hits the oil, it sears and then drops the temperature, then the pressure cooking and rying continues. They got a cup of the coating mix and had it analyzed. The "11 herbs and spices" in there were flour, salt, pepper and MSG. The recipes have probably changed. At least some. The gravy allegedly used to be a complicated recipe touted by Harlan as "pure ambrosia" and so good you can throw away the chicken and eat the gravy. After selling out, they went to a simpler recipe and Sanders called it "wallpaper paste". I will say, KFC got me to appreciate cole slaw. I used to really like the chicken too but it's expensive and I don't get it often. Haven't had it now for years. Comments (2)I've made something similar, but it didn't contain the cream cheese, which I guess would make it much creamier. I would like the addition I think, & will try this soon. I rarely buy the Italian dressing envelopes, if you are interested here are the spice ingredients I found for replacement: Italian dressing mix 1 1/2 T garlic salt 1 T onion powder 1 T sugar 2 T dried oregano 1 t pepper 1/4 t dried thyme 1 t dried basil 1 T dried parsley 1/4 t celery salt Store in a tightly sealed container. To prepare dressing, whisk together 1/4 white vinegar, 1/2 cup olive oil, 2 tablespoons water or olive juice and 2 tablespoons of the dry mix. I have assumed that the 2 tablespoons of the mix equals a package of the purchased stuff. I've also used garlic powder instead of garlic salt to decrease the salt content, but some dishes I end up adding a bit of salt back to the dish. Comments (30)Lynn, Our salad was served after the tasting to clear our palates. It was served with a chardonnay wine. Here's the recipe: Salad to pair w/ Chardonnay Basil Vinaigrette 10 basil leaves 1/3 C extra virgin olive oil 1 1/2 Tbsp Champagne vinegar Pinch salt Couple cranks black pepper 1/8 tsp ground cardamon In blender or food processor, blend leaves & vinegar. Drizzle in evoo while blending. Add seasoning, mix, and refrigerate. Salad Triple Creme Brie - a wheel or large wedge 3 Granny Smith Apples Sourdough Boule (I like Nashoba Valley from Concord) Field Greens Cut double creme into small wedges while cold. Warm to room temp before service. Core and cut apples into thin wedges. Store in ice water until plating. Blot before service. Cut Sourdough into large, thin, crust-less triangles. Lightly toast until barely brown. Brush with evoo and sprinkle with coarse salt while warm. Toss field greens in dressing and plate. Add 2 pieces of cheese. Fan out 3 pieces of apple.
