Just gonna grill a few ribeye steaks and don't yet know whatelse...no big hoopla...

Just another day here. It'll be the same as Mother's Day, or any day..I cook and clean up. LOL

Sigh...........

We are planning a catfish fry, but rain is predicted and I am not frying fish in the house anymore. My awesome DH is from the south and almost swoons when he thinks about platters of catfish, hushpuppies, pickles, cole slaw, sweet tea and the rest of the works.

So anyway, if the weather cooperates (and DH and DS#1 are back from the pool tournament, DS#1 first competition!) then we will be frying catfish. Otherwise, I have no idea and we will be postponing the catfish fry until the following week

But we don't have fresh catfish around here. Salmon yes, halibut yes...catfish...nope..

Sounds delish..I hope the weather holds, the guys get back and the catfish gets fried!

QFC has lobster tails on sale $9.99 for a 8oz a tail so I bought a couple of them. I'll make him rib eye steaks, lobster tails and a salad. Strawberry short cake for desert.

No menu here as my father is gone and my husband and I don't have kids. My brother has kids but both are working so we are thinking about taking him out or cooking on the grill at my house but they are calling for rain (again):(

It's been raining for two days and isn't supposed to stop. We have a party planned for Saturday night with two other families - Scott's neighborhood buddies - to play quoits (like horseshoes) - we even got them matching shirts that say "get drunk and throw things"...

I just picked up filets to grill - (tenderloin - $8.88/lb), we will also have shrimpcocktail, grilled shrimp, broccoli rice salad from our friend nextdoor, I'm making grilled caesar salads, and for dessert I am making a lemon meringue tart from Joy of Baking. The other friend is doing appetizers and dessert for the kids...the kids will have chicken wings.

Scott's b'day is Saturday - so my dilemma will be what to give him actually on Father's Day for dinner!

Guess everybody's trying to dodge the raindrops this weekend...bummer. They are even saying thunderstorms here...maybe I better get some plastic tongs for grilling.

STRESS will be on the menu for sure...
DD called today to say that she and DSIL are sick with colds and sore throats, which mean that the kids will have them by Sunday. Ugh! I was hoping that DD would host since her home is more accessible than ours for my father's walker. Now, who knows? It won't be fun!

Menu here is different for us. Clive fell in love with Bar-B Q when we were in the USofA so we are having pulled pork on a bun, smoked ribs, slaw and baked beans.

I have no clue how to do this but Chris will be here and he is seriously keen on this whole smoker thing. Sould be fun!

We're having a Father's Day Lunch here at the house on Sunday.

I'm making a shrimp ceasar salad with penne pasta in it, marmalade meatballs, bread w/seasoned olive oil and a berry cobbler w/Blue Bell Vanilla ice cream for dessert.

Husband chose menu.

Well...not to be blah.....but this is a hard weekend...as you all now my Daddy died last July 19th...soooooooo very rough Im going to the cemetary Saturday so Im not a mess Sunday. But Johnny is such a beautiful man,husband, father and friend that he deserves a nice day. Im on 2 ends of the scope...pondering rib eyes with crispy onions,creamed spinach and iceberg wedges with blue cheese dressing or his favorite homemade lasagna from scratch w/meatballs and tossed salad and tomatos w/basil and fresh mozzarella.

It sounds like y'all are getting the rain we got last week. I hope you all have sunny skies for Father's Day.

We're heading up to Oklahoma and planning a float trip on the Illinois River near our home up there. We'll be having a picnic lunch, but I haven't figured out the particulars yet. I have a loaf of home made bread in the freezer, so I'll pack that, plus some cheese and whatever lunch meat he wants. We'll probably have some fruit, and I don't know what other sides. There will certainly be a beer or 2 in the cooler. It's been years since we've canoed, but I figure it's like the proverbial bicycle riding.

We'll be having dinner on Sunday at our church festival. It could be ribs or pulled pork, homemade stuffed cabbage or pierogies, potato pancakes, roast beef sandwiches, haluski, cheese steaks, sauage and pepper sandwiches, fresh cut french fries, burgers or hot dogs, pizza, and many varieties of desserts, all washed down with draft beer, mojitos or birch beer.

It's always held the Friday, Saturday and Sunday of Fathers' Day weekend.

BBQ pork ribs, potato salad, fresh green beans, corn on the cob, homemade sourdough bread, and cake for dessert.

My stress has been reduced a bit because my inlaws decided they're not coming tomorrow. Weather seems extremely sketchy for grilling so it's just five adults I'm going to splurge on baked stuffed lobster. The supermarkets don't seem to have small sizes, the fish markets are gouging with up to $12.99/lb but the last place I called has chix and is selling at a fairly reasonable price of $7.99/lb. I'll be making my favorite recipe, stuffed with shrimp and scallops. I think a simple side of asparagus will be all I need; Ritz crackers in the stuffing will be the starch, LOL. Plus we'll be coming straight from cocktails with some simple snacks.

Everything sounds so good.

Decided to go casual. Here's the menu:

To start:
Grilled tequila shrimp
Grilled rosemary bread with diced tomatoes, onions, mozzarella, and basil.

Main course:
Slow cooked baby back ribs finished off on the grill
Grilled chicken thighs and breasts marinated in oil, garlic, herbs, and lemon.
Green salad
Quinoa withe dried cranberries, walnuts, green beans and goat cheese
Veggies (sis will surprise me)

Dessert:
Watermelon
Fruit salad
Some kind of tart

Fish Cakes with Coleslaw and Horseradish Dill Sauce

Less expensive than crab but just as good.
Yield: Makes 4 servings
Active Time: 45 minutes
Total Time: 45 minutes
2 large lemons
1/2 cup mayonnaise
1/2 cup chopped green onions, divided
2 tablespoons sweet pickle relish
2 tablespoons prepared horseradish
3 tablespoons chopped fresh dill, divided
4 slices white sandwich bread, torn into pieces
8 ounces mahi-mahi, cut into 8 strips
1 large egg, lightly beaten
1 8-ounce bag coleslaw mix
2 tablespoons olive oil
Grate enough lemon peel to measure 2 1/2 teaspoons. Halve lemons; squeeze enough juice to measure 1/4 cup. Mix peel, 2 tablespoons juice, mayonnaise, 1/4 cup green onion, relish, horseradish, and 2 tablespoons dill in bowl; set sauce aside.
Grind bread to fine crumbs in processor. Place 1 cup breadcrumbs in medium bowl. Place remaining breadcrumbs in 13x9-inch baking dish. Using on/off turns, very coarsely chop fish in processor (do not form paste). Add fish to breadcrumbs in bowl; gently mix in egg, 1 tablespoon sauce, and 1/4 cup green onion. Shape fish mixture into four 31/2-inch-round cakes; thickly coat with breadcrumbs in baking dish.
Toss coleslaw mix, 3 tablespoons sauce, 2 tablespoons lemon juice, and 1 tablespoon dill in bowl. Season with salt and pepper.
Heat oil in large nonstick skillet over medium heat. Add fish cakes; sauté until cooked through, about 2 minutes per side. Serve fish cakes with slaw and sauce.

Chocolate Covered Peanut Butter Pie
From Emeril Lagasse

Ingredients
o 2 cups crushed chocolate cookies (Graham crackers, oreos or chocolate wafers)
o 1 cup plus 1 tablespoon peanut butter, in all
o 1/4 pound cream cheese
o 3/4 cup powdered sugar
o 2 tablespoons milk
o 2 tablespoons chopped peanuts
o 2 3/4 cup heavy cream, in all
o 6 ounces semi-sweet chocolate, chopped
Directions
Preheat oven to 350 degrees F. In a mixing bowl, combine the cookie crust with 1 tablespoon of the peanut butter. Combine the mixture thoroughly and press into a 9-inch springform pan. Bake the crust for 8-10 minutes.
In an electric mixer with a whip attachment, whip the cream cheee and sugar until smooth. Add the remaining 1 cup peanut butter, milk and nuts and whip for 1 minute. Turn the peanut butter mixture into a mixing bowl. Whip 2 cups of the heavy cream and fold into the peanut butter mixture. Pour the filling into the prepared crust and refrigerate for 2 hours or until the pie is set.
In a sauce pan, over medium heat, melt the chocolate with the remaining cream, stirring constantly, until the chocolate is completely melted. Remove from the heat and cool for 2 minutes, stirring constantly.
Remove the pie from the springform pan and place on a wire rack over a baking sheet lined with parchment paper. Pour the chocolate topping over the pie, covering the top and sides completely. Refrigerate the pie for 2 hours or unti the chocolate coating is set.
Yield: 1 pie

chocolate cream pies (the guys favorite)
