Good Old Garden Salad

booberry85

I was asked to bring a salad to a pot luck at my in-laws tonight. There will be 36 people there. The dinner is in remembrance of my mother-in-law. My mother-in-law is not dead, but suffered a bad stroke back in November. Although there's always hope for a miracle, at 82, it doesn't look like she will recover in a "functional" way.

Anyway, back to the salad. I don't think it needs to feed all 36 people since it is a pot luck, but it'll need to feed a lot of people. At first I was thinking about making a tortellini salad and load it with lots of veggies. Then I thought of the lettuce I'm growing that's about to bolt because of all the hot weather we've had. So I was thinking of a garden salad. Anyway I'd appreciate your help, advice & recipes.

Here's what I have and/or what can be picked:

Cheese tortellini

Lettuce (romaine, buttercrunch and a red leaf lettuce)

Kale

Snow / snap peas

Radishes

Kohlrabi

Green onion

Red onion

Yellow onion

Black olives

Grape tomatoes

Green Pepper

Yellow Pepper

Asparagus

Feta Cheese

Zucchini & yellow squash slices

Cucumber

Strawberries

So what would you make?
