Charcoal grilling suggestions, please!

Hey, Scott brought home a charcoal grill yesterday!

We have been enjoying using our firepit for charcoal grilling, but I really wanted an actual grill. The firepit can take lots of charcoal - lol.

I already have a chimney starter and love it. I took note here last year that the hardwood charcoal stuff was better than briquets - so that is what I have been buying, as well.

Last night, we just grilled some yummy burgers on it - but we were winging it as far as how much charcoal - and what to do with the vents.

I know it isn't that complicated, but still. We only had the chimney starter filled up - should we have had other charcoal in the grill to add the hot stuff to? Or do you add charcoal after you get it started in the chimney thing?

And are those air vents on the bottom? Or is that where you empty out the old charcoal? Or do you scoop it out? or pick it up and dump it?

Do you leave the top vents open mostly? The book said to close vents off to put the fire out.

If I am using flavored chips - do I soak them? When do I add them?

And last but not least - do you have suggestions for things that will taste great on charcoal? Things that will taste better on charcoal than on gas? Our burgers were phenomenal. We still have our Weber gas grill - but I am very excited about the new charcoal grill! can ya tell?
