Get another stove top grill and don't worry about cleaning it.
I can't imagine living without some way of grilling....year around. You could broil....but that's not the same at all.
Get a little grill and put it on your balcony...or in the drive way. My kids at college had a grill.....figure out something!

I make a mean steak on a seasoned cast iron skillet on high heat. Not a grill pan, just a flat skillet. For chicken I use a nonstick grill pan. It's not the same as real grilled food over charcoal but I am not any good at real grilled food so I fake it.

Three options to consider:

1. I too use a super hot cast iron pan.

2. A blow torch.

3. A chimney starter with charcoal.

Linda; I don't miss grilling. I'm not good at it anyway. Don't necessarily want to buy a small grill. I also question and am not willing to take the chance that a grill would be a good idea on my smooth-top.

I only want to know a substitution for grilled meats in recipes.
I was thinking of a cast iron skillet, with finishing in the oven if needed.

A George Foreman Grill/Griddle may be just the answer for what you're looking for...some are quite small, they're easy to clean (d/w safe grill plates), relatively inexpensive, & multi-function (grill & griddle).

There are other brands of similar products also available. Cuisinart & All-Clad both make larger more expensive units if you're looking for something snazzier.

I have a Chatelaine cookbook called 'Sizzlers'. For most recipes it includes the method for indoor (non-grill) cooking. For the most part that method is using the broiler with a meat in a shallow pan 4" from the broiler, brushing often with marinade.

For ribs, precook ribs (simmer on stovetop until fork tender), then bake at 425 basting & turning often.

For burgers - stovetop, medium heat.
