What's for dinner Wednesday?

I woke up at 2:00 this morning and couldn't go back to sleep. We had to be at VA at 11:00 for Harry's blood work (he calls it "visiting the vampires"). Needless to say, I took a long nap this afternoon.

Last week someone here had dried beef gravy for dinner and it sure sounded good. Wish I could remember who it was???? Anyway, that's what we're having for dinner tonight--over biscuits. I need to put a little weight on--LOL!!!

Making squash soup. It's on the stove now. Have some left over garlic bread I'll heat up to go with it.

Golden Corral, today.

Neighbor called me on my cell telling me she had just made a pot of white chili and wanted to share.

Too late for lunch, so I'll have it this weekend.

Monica, your salmon sounds absolutely delicious!!! Summershine, that is one of my very favourite comfort foods. We love meatloaf with either mashed or scalloped potatoes. Like you, we're frigid, here in Ontario Shirley, here is the broccoli soup that we love. Ghoghunter posted it a few years ago. My changes are in brackets. Broccoli-Cheese Soup 1 tablespoon butter, melted 1/2 medium onion, chopped 1/4 cup melted butter 1/4 cup flour 2 cups half-and-half (or 1 cup milk and 1 cup half-and-half) 2 cups chicken stock 1/2 pound fresh broccoli 1 cup carrots, julienned salt and pepper, to taste 1/4 teaspoon nutmeg 8 ounces grated sharp cheddar cheese (I used much less) Saute onion in butter. Set aside. Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and slowly add the half-and-half and milk,then the chicken stock whisking all the time. Simmer for a few minutes. Add the broccoli, carrots and onions. Cook over low heat until the veggies are tender for 20-25 minutes. Add salt and pepper. The soup should be thickened by now. Pour in batches into blender and puree (or use an immersion blender). Return to pot over low heat and add the grated cheese; stir until well blended. Stir in the nutmeg and serve

Pam, we generally eat around 5. Today was super easy, threw the ziti in the microwave! Laura, don't ever worry about posting meals, a number of us have breakfast for dinner and that kind of thing. Less-than exotic meals! LOL Sue, I thought your meal was so good, real comfort food. Then I read "tv dinner". Too funny. Raven, Can you ship me some of your leftovers??? Ribs and brussels sprouts. Oh yummy. Laura we like tuna casserole, I make a roux and put hot sauce in, and peas. Gotta have peas in mine. Pam we like grilled pork chops better than steak! Are your potatoes on the grill as well? Lately I've been cutting the potatoes in slices and grilling them that way.

Warmer here today - around 86. Because of all the rain over the last couple of days, it was very humid. I was so glad to see the sun! Our summer has been cooler than normal. I don't remember a 100 degree day so far. It was cooler than normal last year too. We went out for Mexican tonight. Had a delicious carne asada.

I saw the most beautiful, big green peppers at the store yesterday and they ended up in my shopping cart. So, tonight I stuffed them with a spicy, cheesy, tomatoey, ricey mixture and baked them with some chicken thighs.

I made chicken breasts with just a little stovetop stuffing on top, a potato, and steamed broccoli and cauliflower.

jannie, is your squash soup made with butternut squash? I love that kind.

Steak, sauteed mushrooms and salad. No potato, yeah for me! Patti, I thought you were serious at first about needing to gain weight. Yesterday my sister's doctor told her she needs to gain weight. I couldn't take 2 people in a row needing weight!

Jannie, I really like squash soup, but Harry's not a big fan. He likes squash--just not for soup. Weird, huh?

Glenda, how nice of your neighbor! Know you like white chili so it'll be a nice treat for you.

Sue, I think Harry's a little tired of chili--I could have it every night, myself. Enjoy!

Shirley, I'm making chicken and Stovetop this week (sometime). It's a new recipe for the crockpot. I kick the Stovetop up a notch with extra sauteed onion and celery. woo hoo!!

Pam, I love steak with mushrooms!! Your dinner sounds yummy. Oh, the days of my needing to gain weight are way, way over--but there was a time I really did need to. Ah, those were the days when I could eat anything and everything I wanted. Gee, I miss them!

A recipe I got off one of my blogs. Black eyed peas cooked with celery and onions spooned over corn cakes. and....we had baked sweet potatoes. Worst sweet potatoes I have ever had. Skin was light yellow, potato was white and turned brown the minute you started to peel it. I bought a half dozen so I peeled and roasted 3 last night with some carrots, onions, garlic and Irish potatoes. That's why I baked the ones tonight. Didn't peel until we were ready to eat. Would never knowingly buy a white sweet potato.-( The blackeyed peas were good and I will do them again.

Three crispy beef tacos, and they were delicious.

I was starving. A friend and I tried a new restaurant today for lunch. We had over-priced mediocre salads. Side salad size, at entree prices. Not going back!

Today was my 'hunting and gathering' day AKA shopping. I hit Kohl's~Target~Baker's for lunch, veggie taco's~CostCo~ Sprouts;)

At Sprouts I got roast beef deli style for DH, we have lots of cheeses left from Christmas also 3 of their yummy deli salads~~so it is sandwiches and salads YUM and no cooking for me;)

Tonight was Wine and Dine. We went to a casual place that one of the gals raved about. I had heard other good things about it. I had stuffed flounder with shrimp and scallops. It was okay. Nothing to rave about.
