Mousse emergency! Dads need help for Mothers Day breakfast

I'm a dad heading up a team of bumbling other dad's for a church mother's day breakfast.

For the last couple years we've been doing fairly complicated 5 coarse breakfasts. This year we're trying to step up to a fancy dessert that has 6 elements with two mousses.

The inspiration is this picture but there is no recipe.

I've been able to create 5 of the 6 pieces but I cannot get a DENSE pistachio mousse.

The chocolate mousse came out with a very firm & dense texture to which i desire. (dense to the degree that if you stick a fork in it so that the fork tangs were buried, you could then turn the bowl onto its side and the fork would now stick out to the side and not dislodge. In other words, pretty darn stiff.

BTW, here was the choco mousse that worked perfect.

The problem is that I cannot find a base white generic DENSE mousse that I can add pistachio too. I have now attempted 5 different mousses and they have all come out to essentially a flaccid or fluffy result and not dense to any degree. I'm willing to compromise to some degree on the stiffness but it seems like I'm way off the mark so far.

Can anybody point me to a foolproof known good solution?
