T&T recipe to test new springform pan

My DH just got me a new springform pan. I had complained about our flimsy old ones where the bottom deforms and the thing rusts. It is a Kaiser LaForme 9" - very heavy stainless steel with a non-stick finish. They say that the bottom has a coating that keeps it from scratching so that you can cut the cheesecake (or whatever) on it.

I'd prefer a recipe that is a bit lower fat, perhaps one that uses Neufchatel or other lower fat cheese.

By the way, the configuration of this pan is different than other springforms I've used. The bottom doesn't fit into a groove in the ring. Instead, the bottom is a plateau that dips into a moat around it and then comes back up a bit but lower than the platform. The ring settles down into the moat when you tighten the buckle. With this pan, Lou's pencil trick isn't needed.
