Comments (73)Well, I had good intentions, and got started, but ran out of time to meet tonight's deadline. DH and I went out today on a chicken coop tour of East Dallas. (which was lots of fun, but a whole nother topic) Then I had to clean the kitchen in order to cook in it. But, my little grandson (a month away from 3 yrs. old) and I did get started on Nate's carrot cake cookies, but since we didn't finish making the dough until an hour before his bed time, and the dough has to chill at least an hour, it'll be tomorrow before we bake them and do the cream cheese part. It doesn't matter. Both DGS and I had a great time mixing up the batter. He got to taste the flour, the sugar, the butter, and all the other ingredients as they went into the mix. Comments (15)In the old days, my mom always spread left over icing on graham crackers, topped it with another gramham cracker, and stores them in the refrigerator for snacks. With 4 kids in the family, they did not make it through the day. With left over pie crust, she baked stickies--rolled out the remaining dough, buttered it, sprinkled it with light brown sugar and a little cinnamon, folded the dough in half and sealed the edges and baked. Comments (3)chi, I make them for Amanda every year and I don't add brandy at all. I sometimes use my home canned brandied cherries and sometimes I just use maraschino cherries with no alcohol. It still comes out fine and is Amanda's favorite holiday treat. If I had to choose, I'd go with the Irish Cream or the southern Comfort, although I think Amaretto would be good if you have some. The almond and cherry mixture is something I like. Oh, and I don't always have butterscotch chips so sometimes I do them all chocolate. Still good! Comments (22)I think I am going to try 1/4 tsp almond extract with the vanilla next time. If you add just a little almond extract so that you aren't sure if it is in the recipe or not, it will make cakes taste richer. I am making it again for my sister's birthday in a week. I sent her home with a sample after Thanksgiving dinner. She likes it too and suggested that for her birthday cake. Three years ago, she mentioned to me that she had not had a cake for her birthday since she left home in 1960. I was astounded, but I know her husband does not eat sweets, so I should have investigated.
