My birthday is Monday, on Memorial Day. I think Elery might take me out to eat, I'm pretty much cooked out.

I always wait until the supermarkets announce their sales before I decide on what to make.

It's also helpful to find out the weather forcast to decide if BBQ is a good idea.

Ummmm....breakfast? I'm going to the NC mountains with my quilting friends and we do as little cooking as possible! I'm the breakfast cook as the group says I fry up the most perfect bacon they've ever had! LOL! It just tastes extra good because they didn't have to stand there and cook it!

I'm taking cheese bread, sourdough and a loaf of whole wheat too, plus homemade pimento cheese, crackers, beer and wine. We always fix hamburgers one night, steak another night, chicken casserole brought from home and leftovers the last night. We will be making our usual late night runs to get ice cream I'm sure.

Hope everyone has a good weekend with no storms in sight!

Smoked turkey and ribs... Mmmmm! Smells like summer!!!

It's suppose to be warm and sunny here in Oklahoma. We'll be at a friends house with 3 other couples (5 total) and 6 dogs for a full day of swimming and having fun in the sun! I'm bringing cilantro lime chicken skewers for the pot luck dinner, and coleslaw for lunch (The oil and vinegar kind. The creamy kind is popular in our neck of the woods... Which most of my friends don't care for). Other dishes being brought are... Pasta salad, mexican layered salad, meat ball sliders, jalepeno popper mac and cheese, and chips and queso for the dinner pot luck. We're grilling burgers and dogs with baked beans, chips, and my slaw for lunch. Can't wait to have great times with great friends!

Jennie, That sounds wonderful. I'd be glad to make a trip out there to join your cookout!!! We haven't been in Oklahoma in a while. Our son graduated from Oklahoma State in Stillwater. My brother lived there for about 20 years. We used to visit a couple of times a year.

Do you have the recipe for the meat ball sliders? I haven't heard of that.

Did you get hit with any of the bad weather and tornado's yesterday?

I have several freinds that went to OSU... a great school!!! I grew up in Norman, so I bleed Crimson and Cream ;)

The meat ball sliders are just your standard meat balls and sauce put on a roll with provolone cheese... Balls and sauce kept in a crock pot after cooking to keep warm.

Luckily all of the tornadoes missed our house. We had one that went 3 miles South and one that went about 8 miles NorthWest of us! Luckily we have a storm shelter in case they get too close for comfort... ALMOST had to get in it!!!

Jennie, Thanks for the link for the meatballs and sauce. My son dated a girl from Norman for a couple years while he was in school. I really love Stillwater. An up and coming town at the time my son was there which was over 10 years ago.

Intially I was going to make a pulled pork BBQ. Then I realized I have ribs in the freezer, and I am trying to use up everything in the freezer right now. Below is my menu as of right now:

Pork Spareribs
Baked Beans
Sour Cream Macaroni Salad
Carolina Coleslaw
Sweet Tea
Peach Ice Cream

Appetizer I THINK is going to be roasted eggplant red pepper spread with pita chips or bruschetta, and some stuffed grape leaves from the deli.

Mediterannean style turkey burgers (with Penzey's Turkish seasoning, feta and chopped spinach)
Insalata russa (fancy word for dolled-up potato salad)
Three bean salad, just not sure yet which 3 beans.
Tzatsiki from the deli.
Either a small jam cake or lemon tartlets which I make using the premade phyllo cups. Will probably use premade lemon pudding, top with raspberries and whipped cream.
Wine and beer for those of us who drink alcohol and probably peach green tea punch for those of us who don't. That's just peach green tea, apple juice (or in my case pear juice 'cause I can't drink apple juice anymore), and gingerale with some frozen peaches floating in it.

It'll just be me, BF, BF's son and son's girlfriend. Good thing too, since my patio only seats four, lol!

Hope all of you Oklahomans are okay!!!

Hopefully hubby will barbecue some steaks this weekend. I'm probably going to bake a loaf of bread or two. Mostly, though, I'm planning to get lots of rest...it's production week and I have had some very long days at work.

I've had a hard time deciding on what to fix this weekend. Maybe because we have had a cool spring and this weekend is going to only be in the 60's. So I went to the grocery store yesterday and came home with chicken breasts and burger.

Having company on Saturday for dinner, here's what I decided on.

~Vietnamese Spring Rolls (recipe in the June 2011 issue of bon appetit)

~Asian Grilled Chicken Breasts

~Herb Potato Salad

~Boston Baked Beans w/maple syrup

~Cherry Cheesecake Pie

We will probably add another appy... but the spring rolls will have plenty of shrimp in them and I consider them a combo appy/salad...

Sunday will be good old burgers on the grill and a pasta salad.

Monday...not too worried, there should be leftovers and I just want to work out in the flower beds.

I just took a rubarb/strawberry pie out of the oven.

I'm taking a break from putting the potato salad together.

I will put the artichoke/spinach dip together for baking tomorrow.

I made Ann T's shortbread cookie cups and I'm filling them with Key Lime Pie filling and whipped cream.

I baked chocolate chip cookies for the kids a couple of days ago and frozen them.

I need to cut my lettuce from the garden, wash it, spin it dry so it's ready to put together tomorrow. Not sure yet what I'm going to make for a salad yet.

We have the turkey thawing. The rest of the food will be coming from our kids. DD is making green bean casserole and cheesy potatoes. Not sure what the son's are bringing but I can bet it will be beer!!!!

It's a working weekend for DS, DD and DH so I'm be doing yard work. Today's my B-day so I'm going to enjoy the quiet and plant 52 mostly heirloom tomato plants in the garden. Oh yes food...burgers last night except I cooked my B-Day dinner to myself last night and had a 3+ lb lobster. Yum! Today it'll be a salad with grilled chicken and tomorrow we'll grill some corn, ribs, sausage, etc. If I can convivnce hubby to assist, I MAY get the smoker going to cook the ribs.

DS & his GF invited us for a cook out this afternoon. I made my aunt's recipe for homemade hamburger/hotdog buns, took me two days and four batches total. I didn't think the 1st batch the first day was going to be enough, so made another batch yesterday morning, which was a dissaster cause I forgot to put the yeast mixture in it, so ended up going back to the store to get more flour, milk and eggs. Made two more batches after that. I better have leftovers!!!! I also made potato salad to take.

We also filled the smoker with pork yesterday afternoon. Most of that will go in the freezer, but some will probably be tomorrow's dinner.

I had planned on shopping today for some grass fed beef steaks at the Farmer's Market. The plan was to grill the steaks and stirfry some baby bok choi, gai lon, garlic, ginger with a really spicy sauce.

I did not get to the market today and I won't be cooking anything - today or tomorrow. I injured my knee yesterday and I can't stand. I ran an uneventful 11 miles and then took a tumble while putting down mulch. Hopefully by Tuesday I will be able to use the crutches to get to work.

It looks like my marathon running and pole dancing days are over! :-) There! Now that last remark should get everyone talking. LOL

Hobbling Teresa, I'm so sorry about your knee and about your pole dancing days being over!

I'm so tired tonight I can't wait to get to bed. I would like to make until 8:00 at least!

We had a great time with our family and friends. We had 17 people here yesterday. The weather did not turn out nice at all as they were predicting.
Cool and cloudy. We had a fast moving storm go through right after we took the turkey off the smoker and our front yard was so wet that when you walked on it your legs were wet from the water splashing up on them. That did not stop the kids from playing games outside and tracking the house up with muddy water. I guess I pull the carpet shampoo cleaner out tomorrow. Today is hot and sunny. Wouldn't you figure!

Karen, I'm cleaning the carpet tomorrow night, it must be a Michgian thing. There were tornadoes in Sherry's area, and Elery's, and a lot of people have no power. It rained yesterday, but today it was sunny and 87F. Way too darned hot!

Teresa, sorry about the knee. I'm having mine fixed on June 13, so I guess my pole dancing days are over too!

So sorry about your knee, Teresa. Mine are in a state of rebellion, too. Just sore from garden work, though. Hope yours gets all better soon.

Had burgers on the grill w/ King Arthur home-made buns, stir-fried green beans and strawberry Jello w/ bananas on Sunday. Yesterday, marinated grilled chicken, chili bean salad, garlic smashed potatoes & Home-made dinner rolls. I tried a new marinade recipe (mustard & balsamic vinegar) that turned out really good & the rolls were made from a recipe I got here on the Cooking Forum. I think it is Lindac's recipe. Anyway, they were delicious. DSII ate one chicken leg and 4 dinner rolls plus more during the night...there's only one roll left this morning (plus a pan of eight that I put in the freezer.)

And, yes, it was too darned hot to be baking bread but had to fire up the oven for the smashed potatoes and had some sweet potatoes that needed to be baked.

Ann T - Your shortbread cookie cups were a hit. I filled them (well the grand daughters filled them) with a no bake key lime pie filling. All 24 were gone in minutes.
