There is no such thing as too much lobster. We have lobster earlier this week. I just made a cold plate with some prawns and avocado and serve it with a seafood/roumalade sauce. You could also cut the lobsters in half and brush with lemon or garlic butter and reheat on the grill. Save some to make Alexa's lobsters triangles. These are wonderful and freeze beautifully. Set aside Melt 2 tbsp butter in a small skillet and sauté the scallions for 2 or 3 min. Add lobster meat and wine or vodka and stir quickly to combine over high heat. Drain the mixture reserving the liquid. Melt the remaining 2 tbsp butter in another skillet. Add the flour and cook slowly without coloring the flour for 5 minutes. Add the reserved liquid and cream and stir constantly until the mixture begins to thicken. Stir the lobster meat back into the cream mixture, add cayenne and season to taste. Cool completely before filling the triangles. Prepare the triangles as you would sharonÂs Spanikopita. If you need those directions, I can copy them over. I do not know if these freeze, but I am not going to need all 50 for Xmas Eve, so I am going to give it a shot with the leftovers. Shellfish sauce - Remoulade sauce ================================= Source: My Own 1 cup Homemade Mayo, or 1 cup Hellmans mayo 1/4 cup Chile Sauce 1 garlic Clove minced 1 tablespoon horseradish 1 tablespoon dijon mustard (Coarse) splash of Worchestershire sauce 2 tablespoons HP Sauce (or A 1 Sauce) fresh squeezed lemon juice fresh dill salt and pepper . Mix all of the ingredients together. Taste and adjust to suit personal taste. If you like Horseradish, add more, or more mustard.

Lobster Facts: • When the first European settlers reached North America, lobsters were so plentiful that they would reportedly wash ashore in piles up to 2 feet high. Their bounty made them a precious source of sustenance during hard times and gave them a nasty reputation as the poor man’s protein. • Native Americans used lobsters to fertilize their crops and bait their fishing hooks. They also ate the abundant crustaceans, preparing them by covering them in seaweed and baking them over hot rocks. According to tradition, this cooking method inspired the classic New England clambake. • At first, lobsters were gathered by hand along the shoreline. In the late 1700s, special boats known as smacks, which featured tanks with holes that allowed seawater to circulate, were introduced in Maine for the transport of live lobsters. The workers who operated these shellfish-friendly vessels were known as smackmen. It was not until the mid-19th century that lobster trapping, also first practiced in Maine, became a more popular way to collect the sea creatures. • Dirt-cheap because they were so copious, lobsters were routinely fed to prisoners, apprentices, slaves and children during the colonial era and beyond. In Massachusetts, some servants allegedly sought to avoid lobster-heavy diets by including stipulations in their contracts that they would only be served the shellfish twice a week. • The first lobster pound was established in Vinalhaven, Maine, in 1876. The town is still home to a thriving lobster fishery. • Lobster began to shed some of its negative reputation and gain a following among discriminating diners, particularly in Boston and New York City, during the 1880s. Prices immediately began to rise. • Because lobster was considered a delicacy by the time World War II began, it was not rationed. The largest lobster on record was caught off Novia Scotia in 1988. It weighed in at 44 pounds and was 42 inches long. Scientists believe it was at least 100 years old twice the lifespan of the average lobster. • The lobster, which has changed little over the last 100 million years, is known for its unusual anatomy. Its brain is located in its throat, its nervous system in its abdomen, its teeth in its stomach and its kidneys in its head. It also hears using its legs and tastes with its feet. One of the few things lobsters have in common with humans: They tend to favor one front limb, meaning they can be right-clawed or left-clawed. • When crowded into tight quarters such as store display tanks, lobsters tend to become cannibalistic. Sellers tightly band their claws to prevent them from feasting on their neighbors. • Though considered a rich and decadent food, lobster meat contains fewer calories than an equal portion of skinless chicken breast. This always works for a celebration dinner. ROASTED SURF 'N' TURF 2 lobster tails 1/2 tsp. salt 1/2 tsp. seafood seasoning 1 (3 lb.) whole beef tenderloin 1 Tbs. melted butter or margarine 1 1/2 tsp. lemon juice 6 slices bacon 1/4 cup finely chopped shallots 1/4 cup finely chopped green onions (scallions) 1 clove garlic, finely minced 1/2 lb. Mushrooms, thinly sliced 1/2 cup butter 1/2 cup dry white wine 1 tsp. Worcestershire sauce (optional) or 1 tsp. chopped fresh or 1/4 tsp. dried tarragon (optional) Place lobster tails, salt and seafood seasoning in a medium saucepan and cover with water. Bring to a boil; reduce heat and simmer 5 minutes. Remove from water and drain. Let cool until able to be handled. Carefully remove lobster tails from shells, keeping meat in one piece. Cut each piece of lobster meat in half lengthwise and set aside. Cut a horizontal pocket through the center of meat to within 1/2 inch of opposite side of tenderloin, slicing the entire length of tenderloin. Carefully stuff lobster pieces, end to end, inside tenderloin. Combine the 1 Tbs. melted butter and lemon juice; Drizzle on lobster. Fold over tenderloin to resemble original shape and tie with butcher's twine. Set aside. Cook bacon in a skillet until slightly crisp; drain, reserving drippings. Crumble bacon; set aside. Put beef in shallow pan and brush entire surface of meat with bacon drippings. Insert meat thermometer in center of roast so the point is right below the lobster, making sure it doesn't go all the way through and touch the pan. Bake at 400 degrees for approx. 25 minutes or until thermometer registers 130 degrees (rare). While roast is cooking, saute shallots, green onions, garlic and mushrooms in 1/2 cup butter. Add wine and Worcestershire sauce or tarragon (but not both). Simmer until roast is ready. To serve, remove twine and sprinkle top of meat with crumbled bacon. Serve sauce with sliced tenderloin. Note: The roast can be stuffed earlier in the day and refrigerated (uncooked). Add a few minutes more cooking time if made ahead. The sauce can also be made ahead and reheated.

I cook them as described in the above link... A skewer is a must to keep them straight and cook quick and even...little herb to the table and wedge of lemon on the plate. Used to be our NewYears tradition when we lived around the corner from a NYC distributor...open to the neighborhood residents for a couple hours on Saturdays. The culls (missing a claw) were 5 for 20$.
