I like it with a little onion and celery, too and it has to be on a grilled New England split top hot dog roll!

I haven't had a lobster roll in years and years. I lived in Maine for a while and we did our share of eating lobster. Our friends and next door neighbors were from Bath and their parents would come up to visit us all and bring lobsters and lobsters. It was sooooo good.

Only lobster meat and light on the mayo for me - no filler. Ditto on the buttered, grilled spit top hot dog roll, lined with a nice crisp piece of romaine for crunch. Lemon wedges for squeezing.

Well, since I don't like mayo my preference is for an Abbott's lobster roll. Nothing but a half pound of lobster meat dripping in melted butter on a grilled split top roll. Oh yum! We've been known many a time to get back into port, wash the boat, stop by the house & grab the picnic basket, sterling silver candle holders & flatware, white tablecloth, wine for DH, & head to Abbott's for 'Lobster In The Rough'...sitting on a picnic table with our white tablecloth, candles, watching the boats go down the channel, & dripping butter from the lobster down our chins! Man, how long is it until Memorial Day when they open for the '09 season???

Lived in Maine for 20 yrs. and seagrass described what I think is the perfect lobster roll. I would add that Hellman's is the preferred mayo.

My stepmother was born and raised in Southern Maine and lives there still. Her mother and father likewise were born and lived their entire lives there. She likes lobster rolls even more than plain lobster. I have sent her an email to get her authoritative opinion on the subject, and I'll keep y'all posted!

I was so disapoointed with lobster rolls we had in New England - they seemed to be drowning in mayo.

Here's another Maine purist checking in. Lobster(claw meat is my favorite), Cain's mayo, in a grilled hot dog roll. The sweet buttery taste of the lobster is all you need. NancyLouise

Im with Triciae NO MAYO here but thats because I dont eat it...I like it on a buttered grilled hot dog roll with butter.

I've received the reply from the authority on the subject (at least as far as I'm concerned), and here is her reply:

Lobster and Mayo is the thing. I do think that people around here have progressed into better eating and do add celery etc. I wouldn't want the onion in there though. Christ Church used to have a luncheon when they had their fairs and the women who mixed the lobster used just Lobster and Mayo BUT she also used an undisclosed amount of french dressing to the mayo and they were just delicious.

There you have it, straight from the keyboard of a dyed-in-the-wool Yankee cook of the State o' Maine variety. She doesn't do foo-foo cooking, but everything she makes is very tasty, so I for one will take her word on this.

I put celery, onions, relish etc in my tuna salad of course, but I think all that stuff is to disguise the tinny taste of canned tuna. Lobster tastes so good on it's own, I think I'd probably choose not to dress it up too much either. Of course, no lobster in my house makes it past the drawn butter into the fridge to be used as a lobster roll in any case.
