Dumpling Mess...can you help?

Hi all. I am a a lurker most of the time with an occasional post. Ya'll are so helpful on recipes that I am hoping that someone can tell me why my dumplings always turn, well, into snot balls. I have tried many different recipes and I think I follow them closely. I am not a gourmet cook, but I get around the kitchen okay. I have to be doing something fundamentally wrong here. They drink up all my stock (chicken & dumplings) and just become glossy, messy, tasteless blobs. I think I'm cooking them long enough, but they never seem to 'take shape' or 'dry out' any. Any ideas? Thanks in advance!
