Dumplings, dumplings, dumplings...

Okay. So the other day, I made a big pot of double strength Chicken soup (that's when I make stock from a chicken, using chicken stock as the "water") because a friend of mine has had a really rough time, health wise, and needs building up now but can't eat very well yet.

Took her some for this week, and some to freeze, and still have enough for dinner tonight. Which is good, because it's a chilly, rainy day.

Problem is I was planning on matzoh balls until I remembered that I was out of matzoh meal...nearest store that carries it is too far away for my plans.

SO.

Corn dumplings? Biscuit type dumplings? Spaetzle?

Got a bee in my bonnet to try potato dumplings, which I have never made nor eaten. The one time I tried gnocchi, I was underwhelmed by the texture (or lack thereof), so I thought a grated potato dumpling might be more to my taste than a cooked potato dumpling. Recipes abound...but, none have said anything about how coarsely to grate? There is a big difference in graters, after all!

I noticed many recipes call for shoving a crouton into the middle...is there a reason for that? Does it help them to cook more evenly perhaps?

In addition to these questions, general tips as to dumpling making would be of interest...recipes for favorites as well, not necessarily restricted to potato dumplings. :D
