For the orzo that wants to grow up to be mac n cheese, start here:

Orzo w/ Parmesan and Basil

This recipe is okay, but I prefer to make it with less cheese and a tablespoon of cream, light sour cream, cream cheese, etc. I just eyeball everything, and I often substitute random things for the chicken broth and herbs (any fresh herbs will go nicely - use whatever hard cheese you prefer), so play around with it. I don't like this recipe very much without the addition of something creamy, though. I think it gets sticky without it.

This one is also very good (I've used almonds, too):

Hazelnut-Mushroom Pilaf

And, while we're on the subject of side dishes (okay, it's rice, not orzo), this is another one I've added to my regular rotation (again, I just eyeball everything and use way more carrots and onions than it calls for, often leave out the peanuts, and make it much spicier than the recipe calls for):

Carrot Rice

The rice goes great with:

Okay, I'm way off-topic in my own post, but I got sidetracked by my "weeknight rotation" so I'll stop now.
