The picture of this pasta salad looks delicious. I have no experience with saffron (except that I know it's very expensive, but you don't use much)

Saffron Orzo Salad

1 lb orzo, about 2 cups

1 cup frozen peas

3 tbsp olive oil

8-oz bottle of clam juice

zest and juice of 1 lemon

6 garlic cloves, minced

3 tbsp chopped fresh rosemary

1 tsp saffron threads

1/2 tsp salt

1/4 tsp hot pepper flakes

4 medium tomatoes

1 cup chopped roasted red peppers

2 green onions, thinly sliced

Cook orzo al dente, about 8 minutes. Add peas the last 2 minutes. Drain and rinse with cold water. Drain well and cool completely. Pour into a large bowl and stir in oil.

Put clam juice, zest, garlilc, rosemary, saffron, salt and pepper flakes into a small saucepan. Bring to a boil over medium heat. Simmer 5 minutes; set aside to cool.

When clam juice has cooled completely, pour over the orzo. Cut tomatoes in half crosswise and squeeze out seeds. Coarsely chop. Stir into orzo, along with peppers and onions and lemon juice. Taste and add more salt if needed.
