Grainlady, I made your whole wheat bread recipe and...

have a few questions. First of all, let me say that both my husband & I are enjoying it. The texture is lovely, and it's not too sweet. So I can see using it for a lot of savory applications.

Anyhow, here are my questions:

1. I had KAF white whole wheat flour and Stone-Buhr whole wheat flour. I used the KAF white for the sponge and added the Stone-Buhr (which was a much courser grind) later. Would it have been better to use the courser Stone Buhr for the sponge? Or does it not make any difference whatsoever?

2. I don't have SAF yeast so I used the same amount of bread machine yeast. Was that about right? I tried finding information about the different yeasts & their equivalents; I know I squirreled it away somewhere but had no luck locating it. Would you mind giving me that information once again?

3. I wasn't quite sure what size of bread pan to use. My total weight of dough was about 2 lbs. 4 oz. I ended up using two 8-1/2 x 4-1/2 pans. The bread came out fine; it didn't spill out over the pans. But I was very careful about not letting it overproof. Would 9 x 5 pans have been better?

Of course, I did a few things differently, mainly because I got a bit too ambitious the day I made the sponge. I realized I'd never get around to baking it that day, so after about 8 hours on the kitchen counter, I stuck the sponge in the fridge and left it overnight. I didn't think that would do any harm. I also used dried buttermilk powder because I didn't have any fresh on hand. And I reduced both the salt and yeast by 1/2 teaspoon because of my husband's low sodium restrictions.

All in all, I was very pleased with the results and the sponge technique. Thanks for the recipe and technique.
