No trouble at all. I have to credit my dear friend Mildred with this recipe. I have a sponge setting as I type.

100% Whole Wheat Bread
Bread Machine Recipe

(changes for making it by-hand towards the end)
Sponge:
3/4 c. lukewarm buttermilk (I use homemade kefir.)
3/4 c. lukewarm water
2-1/2 c. freshly-milled white whole wheat flour (Prairie Gold from Wheat Montana is my favorite wheat)
1/4 t. ascorbic acid*
2 t. SAF-Instant Yeast
Mix these ingredients in the bread machine pan and set the machine to QUICK DOUGH. As soon as the mixture is well mixed, unplug the machine and allow to sit (with the lid closed) at least 2-1/2 hours or up to 12 hours (or something in-between - I usually use a 2-1/2 or 3-hour sponge, or overnight. You may want to extend this time if using hard red wheat flour to closer to 8-12 hours for a more mild flavor).
After the sponge has set, with a soft spatula, mix these ingredients into the sponge:
2 T. melted coconut oil (or butter or veg. oil)
2 T. agave nectar (or honey)
1 egg
(option: I also add 1/3-1/2 c. chia seed gel. **)
Add to the top of the sponge mixture in the pan:
2-1/4 c. freshly-milled whole wheat flour
2 t. salt (on top the flour)
Set the bread machine on regular DOUGH cycle and process. Check the dough to make sure it's formed into a nice soft ball and adjust the hydration as needed.

Grainlady changes: I process the dough in the bread machine until the dough is mixed and kneaded. I don't let it raise in the machine. I place the dough in a dough rising bucket, place the lid on the top and allow the dough to rise ALMOST double. Whole wheat dough doesn't have the extensibility that white bread dough does, so try not to let it go more than double. Using a dough rising bucket helps you to accurately judge when dough has doubled. For this recipe a 2-quart container with a tight-fitting lid works perfectly.
Back to original recipe:
After the bread machine finishes the dough cycle (or has doubled in the dough rising bucket), dump the dough onto a Silpat. With oiled/greased hands, deflate the dough by pushing it in the middle with your fist then drawing all edges of the outside dough into the middle (turning the dough inside-out so to speak). Divide the dough into portions (I scale the dough for accuracy.) Round each portion (make it into a smooth ball) so that all the gluten strands are going into the same direction. Cover; allow to rest 10-15 minutes so the gluten relaxes. Form dough (with oiled hands), pan, cover with plastic wrap for the final proofing - etc....

Two loaves - 375F - for 20-25 minutes or until internal temperature of the loaves are between 190-200°F.
I make this bread into 3 small loaves (7-1/2x3-1/2-inch pans - 350°F for 20-25 minutes
------------------------------------------------------
* ascorbic acid powder is available at most health food stores. It's a very important ingredient when you make bread that includes wheat germ, which is in whole wheat flour. There is a substance in wheat germ called Glutathione. This substance breaks down the gluten and can result in a short loaf. The bran in whole wheat bread can also cut the gluten strands which results in a short squatty loaf. The sponge helps to soften the bran. The addition of 1/8 t. ascorbic acid per loaf of bread will counteract the negative effects of Glutathione. It will help prevent the gluten bonds from breaking down and will also help repair gluten bonds that have been broken. The ascorbic acid also helps sustain the leavening of bread loaves during baking. Yeast grows longer and faster when there is also ascorbic acid. Do not add it to sourdough recipes because they are naturally an acidic atmosphere.

** Chia seed gel is a mixture of chia seeds and water (1 part chia seeds to 9 parts water or 1/3 c./2-oz. to 2-cups water). This mixture thickens as the seeds absorb the water and adds hydration to the crumb of the loaf and keeps the bread softer longer. It looks like poppy seeds in the bread after it's baked. Excellent nutritional boost and additional fiber.
BY HAND, place sponge ingredients in a glass or plastic bowl and mix the sponge ingredients together with a Danish dough whisk (or a wooden spoon) and beat the ingredients about 100 strokes. Cover, and allow to sit at room temperature at least 2-1/2 hours.

After the sponge is done: add the flour gradually to the sponge mixture using a Danish dough whisk (or wooden spoon) and carefully beat in each addition of flour before adding more. You may end up beating the dough 500-800 strokes, but do as much mixing as you have the strength to do. If you need to stop and rest, that's fine. The rest will allow the dough to hydrate. Towards the end of mixing, add the salt (DON'T FORGET!!!). The gluten will tighten up and make mixing harder after adding salt. The better job you do of mixing the dough and developing the gluten while it's in the bowl, the less time you'll need to knead it. When you knead the dough, avoid adding a lot of bench flour. If you have a problem adding too much flour during kneading, grease/oil your hands during kneading instead - especially during the last 2-3 minutes of kneading.

Complete per recipe above...

Corn Bread with whole wheat and applesauce?
Q
Comments (10)
I almost always make my cornbread with whole wheat PASTRY flour, because I LIKE it, I like the "rustic" texture it adds to things. You can sub splenda for sugar in cornbread, that's what I do if I know I'm going to eat it up relatively quickly. I'm one of those people who thinks splenda is best in things that get eaten right way because if not I think it develops a chemical taste in foods over time. I have never made cornbread with applesauce, but that's a way to add the moistness sugar adds to things but less sweet. But still sweet. I like a middle of the road type cornbread, not sweet but not completely sugarless either, so I would probably like it with applesauce. My recipe calls for sour cream except I use non-fat plain yogurt with just as good results. I also use two egg whites instead of one egg. Sourcream (or yogurt) Cornmeal muffins 1 cup unbleached white flour 1/4 cup whole wheat pastry flour 3/4 cup fine yellow cornmeal 1/8 cup Splenda baking mix (or 1/4 cup sugar) 3 tsp. baking powder scant 1/2 tsp. salt 1 cup nonfat plain yogurt 1/2 tsp. baking soda added to yogurt 2 egg whites I entered this recipe in my recipe box on "SparkPeople" (check it out, it is GREAT for recipe and meal planning ideas). It's OK to join, they won't send you a bunch of junk mail. The stats on it are: Amount Per Serving Calories: 91.9 Total Fat: 0.5 g Cholesterol: 0.3 mg Sodium: 23.8 mg Total Carbs: 18.2 g Dietary Fiber: 1.1 g Protein: 3.0 Kinda low on fiber and high on carbs so you could improve it by subbing whole wheat flour for all or some of the white flour. I'd start out with half and half and move up as my tastebuds adjusted. Also could possibly reduce salt, but I can't vouch for that part since I have never made it that way. I've done it with at least half WWH flour though. I eat these muffins with spreadable "lite" butter, which you might want to look into since it is a mix of sat. and unsat. fat. Also, here's my recipe for lima beans, which I have served at a couple of potlucks and people have said they liked them. Elegant Lima Beans 4 cups cooked lima beans (I use the green baby limas, the frozen ones, but I'll bet this would be good with the white butter bean limas too. I've seen both green limas and butter beans sold canned some places. I just cooked up a batch of dry limas for the first time last year and I really liked them. I make my beans in the crockpot.) 1 can (15 oz.) tomato sauce 4 oz. shredded lowfat, lowsalt swiss cheese. Frankly I actually use jarlsburg swiss for this, or kasseri cheese, but both of those are high salt high fat cheeses. 1 - 3/4 cup chopped walnuts (I use the lower amount, walnuts are high in calories and fat. I'll bet you could even go down to 2/3 cup on those.) 1/4 tsp. dried basil, crumbled, (or maybe a little more, depends on how you feel about basil, I love it) 1 green pepper, diced (I also sometimes add a small diced zuchinni, which you can also add or sub. for the green pepper since some people don't like peppers. Can also use celery if you like it. Start with what you know you will like though. The additional veggies add more good fiber but I guess you could leave them out if you hate those green veggies.) 3/4 cup water or veg. broth, unsalted if possible 1/2 tsp. salt (you could experiment with less, I almost always use less than the recipe calls for, or even omit because canned tomato sauce has salt in it. I get unsalted veg. broth bouillon cubes in the health food section of Wegman's, but if you can't find unsalted broth, then use water or leave out additional salt.) 1/4 tsp. pepper minced parsley to garnish Combine cooked or defrosted limas, vegetables, tomato sauce and water or broth. Simmer 10-15 min. until vegetables are just starting to get tender. Mix in shredded cheese and walnuts, and bake in 350 degree oven for 30 min. Notes: You can toast the walnuts in the oven as it is preheating before adding them to the casserole, but watch them carefully so they don't burn. Usually about 8 min. in the oven at 300 is enough to toast. I hardly ever had fresh parsley so I stir in about 1-2 tsp. dried parsley to the stew before putting it in the oven.

Honey whole wheat bread question
Q
Comments (24)
Whistle - Here you go.... 1. Scalded the milk and cooled it. Mixed warm milk, warmed water and o.j., egg and agave nectar (or honey if you are using it) in the bottom of the pan. 2. Mixed together flours (and vital wheat gluten and flaxmeal, if used) and add to the top of the liquids. 3. Add the yeast to the top of the flour. (Note I added the fat and salt later during the kneading. It takes stress off the bread machine with this much bulk to mix the dough WITHOUT the salt. The gluten develops quicker, and once the salt is added, the gluten strands tighten up making kneading a little more difficult. 4. Set Zo. on QUICK DOUGH. Press START. 5. After 5 minutes of mixing/kneading, be sure to check to make sure the dough has the correct hydration and adjust it if you need to. You want a nice soft dough ball. 6. After 10 minutes of kneading (or when it looks like the gluten is developing nicely, add the melted butter and salt. When the add-in beep sounds, add 1/2-3/4 c. multi-grain cereal (if using it - I milled a mixture of barley, rye, triticale, spelt, oats and rice). 7. When the kneading is complete, remove the dough from the pan and place in a dough rising bucket (or however you normally work your dough). DO NOT allow the dough to rise in the bread machine because this is more dough than suggested for the machine. 8. Allow the dough to rise to just under double. Punch down. Divide dough (I had 3 portions that weighed around 1-lb. 2-oz. each. Round the dough (so you have the ball formed into a tight ball with NO shaggy edges from the dough being cut, and the gluten strands are going from the top to the bottom of the ball), cover (I use plastic wrap) and allow to rest 10-15 minutes so the gluten can relax. Form, cover (plastic wrap), and allow to rise to just under double...... I made one portion into 9 dinner rolls (8-inch square pan) and baked the bread in 8"x4-1/2" NORPRO pans, but I also use heavy-gauge Calphalon pans that are the same size, or will use some ancient Bake King loaf pans that are 7-1/2"x3-1/2" (for dough amounts between 12-16 ounces). If the dough is over 1-pound, I'll use the larger pans. I baked my loaves to 200°F. when tested with an instant read thermometer. -Grainlady

Grainlady, I make the Bulgur Wheat Bread
Q
Comments (13)
First off, I meant to say, "I MADE THE BULGUR WHEAT BREAD"! I have no idea how I ended up sounding like a three year old. Secondly, the recipe was incredibly easy. I especially like its lightness & soft texture, and, as I said before, the fact that it was not overly sweet. BULGUR WHEAT LOAF Grainlady from CF/ Pillsbury 3/4 c. water 1/2 c. bulgur wheat 2-1/4 to 2-1/2 cups Pillsbury's BEST All-Purpose or Unbleached Flour 2 T. brown sugar 1 to 1-1/2 t. salt (I only used 3/4 tsp.) 1 pkg. active dry yeast 1 c. water heated to 120°-130°F 1/4 c. oil 1 c. Pillsbury's BEST Whole Wheat Flour 2 t. water 1 egg white 1 t. bulgur wheat Grease cookie sheet. Bring 3/4 c. water to a boil in small saucepan. Remove from heat; stir in 1/2 c. bulgur. Let stand 20-25 minutes or until water is absorbed. Lightly spoon flour into measuring cup; level off. In large bowl, combine 1 cup all-purpose flour, brown sugar, salt, yeast, 1 cup hot water and oil; beat at low speed until moistened. Beat 3 minutes at medium speed. By hand, stir in bulgur mixture, whole wheat flour and additional 1 cup all-purpose flour to form a stiff dough. (At this point, I let the mixture rest for 20 minutes before kneading.) On floured surface, knead in 1/4-1/2 cup all-purpose flour until dough is elastic, about 5 minutes. Place in greased bowl; turn greased side up. Cover loosely with greased plastic wrap and cloth towel. Let rise in a warm place (80-85°F) until light and doubled in size, about 45 minutes. Punch down dough several times to remove all air bubbles. Shape into round loaf. Place on greased cookie sheet. Cover; let rise in warm place until light and ALMOST doubled in size, about 30 minutes. Heat oven to 375°F. Uncover dough. With very sharp knife, cut a 1/2-inch deep slash across top of loaf. Cut another at a right angle, making a cross. In small bowl, beat 2 t. water and egg white until blended. Brush over top of loaf; sprinkle with 1 teaspoon bulgur, if desired I omitted the sprinkling of bulgur). Bake at 375°F for 25-35 minutes or until golden brown. Remove from cookie sheet; cool on wire rack. One loaf = 17 slices. My notes: I always reduce the salt content of breads because my husband is on a salt restricted diet. To add a bit more flavor because of the lower salt, I added 4 tbsp. dry buttermilk powder. I let the dough rest (autolyse) for 20 mins. before kneading. Grainlady had a personal note about forming a tall loaf, so I made sure to keep the dough ball high & round rather than flat. I put the shaped dough on parchment paper on a wooden peal and then baked the bread directly on a preheated baking stone. I removed the parchment about ten minutes before the bread was done.

Recipes for whole wheat flour, other than bread?

King Arthur whole wheat flour is higher in gluten and appropriate for yeast breads because of that. If you use it for making quick breads, cookies, pastry, etc. make sure you keep mixing to a bare minimum or you'll develop too much gluten and get a tough baked good. If you use it for pastry, add a little more fat to help coat the flour and shorten the gluten. Whole wheat PASTRY flour, milled from soft wheat varieties, is your best choice for whole wheat pastry. King Arthur whole wheat flour is milled from high-gluten hard wheat varieties and therefore not really the appropriate flour to use. Whole Wheat Pastry Flour is also a better choice for biscuits and cake. I'd never use King Arthur Whole Wheat Flour for cakes. You'll end up with a tough crumb. I mill my own whole grain flours, so I can choose the correct type of grain for each use. If you make quick breads, including muffins, using this flour, stir it in by hand rather than with an electric mixer to avoid developing too much gluten. King Arthur Whole Wheat flour will make wholegrain noodles or pasta, but once again, it's not the correct choice. Pasta and noodles are best made with flour milled from Durum Wheat, not hard wheat. -Grainlady WHEAT AND SESAME TORTILLAS (source: "Natural Meals in Minutes" by Rita Bingham) 2 c. whole wheat flour (you may also use 1/2 ww and 1/2 all-purpose) 3 T. dry milk powder 1/3 c. sesame seeds extra flour for board 2 T. butter or applesauce (I use coconut oil) 1/2 t. salt 2 T. yogurt (I use kefir) 1/2 c. lukewarm water Combine dry ingredients. Use hand or electric beaters to cut in butter or applesauce until mixture resembles fine crumbs (I used a pastry cutter). Slowly pour in water and yogurt, mixing lightly with a fork. On a floured board, knead dough until smooth and elastic, about 5 minutes. Shape into a ball, cover and let stand for 10 minutes (I covered it with a damp towel). Divide and shape dough into 8 balls (I make at least 16 tortillas out of this dough). Remove one ball at a time and roll paper thin on floured board. Place on heavy, hot, ungreased skillet, over medium-high heat. Blisters should appear right away. Brown on one side and turn. Cook about 30 seconds. Makes eight 9-inch tortillas. ------------------- WHOLE WHEAT SUGAR COOKIES http://kansaswheat.org/general.asp?id=470 Found at the Kansas Wheat Commission Web site along with many other recipes using whole wheat.
