More Waffles .....Potato.....pics

I wanted to try and make a potato waffle. But I couldn't find a recipe that appealed. Many use frozen hash browns. Not something I have on hand.

So I par boiled two Russet potatoes, grated, seasoned with salt, pepper, chives, cheddar cheese, melted butter, and two egg yolks. Beat and folded the two egg whites into the mix.

There was enough batter to make one full "four" square waffle.

And enough for one extra square.

The waffles were very light. And only took eight minutes to bake. I think this recipe would work great using mashed potatoes as well.

And no clean up. Nothing sticks to this waffle maker.
