what kind of filling is it?

The best Chocolate chip cookies especially if undercooked a bit..are Sol's Brown Sugar Chocolate Chip Cookies..

Brown Sugar Chocolate Chip Cookies - Sol

2½ cups AP flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
2 cups light brown sugar, packed
2 large eggs
1 tablespoon vanilla extract
2 cups semisweet chocolate chips
½ cup chopped walnuts, optional
Whisk together the flour, baking soda and salt. In a mixer, cream the butter and sugar until light. Add the eggs, one at a time, beating well after each addition. Add vanilla. On low speed, add the flour mixture, and mix until barely blended. Add chocolate chips and nuts. Drop by tablespoons onto sheet pan and bake in a 350°F oven, for 12-15 minutes.

~I omit the nuts, but have started adding only 2 cups of flour and 1/3 c of Almond Meal..Hubby has declared THAT'S the way to go. Cookie jar empties very quickly any way these are made though. LOL

As far as filling is it an oreo type filling or a whoopie pie type filling you are after?

terri_pacnw, I did make Sol's chocolate chip cookies last week when DS was home from college--oh so yummy!!

As for the filling, that's a good question--what kind of filling do you guys think is in those yummy mall cookies?

I've never had them. So I don't know. lol
I came across a recipe a few years back that was "smores" cookies. They looked like tollhouse and were a chocolate chip cookie, but had some graham crumbs in them. Then the filling was made with marshmallow fluff and something. Might have been a Taste of Home or Quick Cooking recipe..as I think about it..I'll go look..that filling would be good..with our without the graham cracker crumbs.

I finally found it..it's in the link that might be useful, but here's some more "sandwich" cookies.

Chocolate Chocolate Chip with Mocha Cream Filling

Banana fanna fo fanna . . . These banana sandwich cookies will give your taste buds a reason to sing. Fee fi fo manna . . . banana!

Cookie

1 cup butter or margarine, softened
1 cup sugar
1 medium (1/2 cup) ripe banana, sliced
1 egg
1 teaspoon vanilla
2 1/3 cups all-purpose flour
¼ teaspoon salt
½ cup chopped pecans

Filling

3 cups powdered sugar
¼ cup butter or margarine, softened
1 teaspoon vanilla
2 to 3 tablespoons milk

Directions

Preheat oven to 350 degrees.

Combine butter, sugar, and banana in large bowl. Beat at low speed, scraping bowl often, until smooth. Add egg and vanilla; continue beating until well mixed. Add flour and salt; continue beating until well mixed. Stir in pecans by hand.

Shape dough into 1-inch balls. Place 2 inches apart onto greased cookie sheets. Flatten balls to ¼-inch thickness with buttered bottom of glass dipped in flour.

Bake for 10 to 12 minutes or until edges are lightly browned. Remove from cookie sheets immediately; cool completely.

Combine all filling ingredients except milk in small bowl. Beat a medium speed, gradually adding enough milk for desired spreading consistency. Spread 2 teaspoons filling on bottoms of half of cooled cookies. Top with remaining cookies, bottom-side against filling.
