Why, oh, why, can't I cook cabbage?

Again tonight, another ghastly mess of cooked cabbage! My mom makes wonderful cooked cabbage: wedges cooked in salted water with a little butter added turn out tender and delicious every time. Mine usually burns but never seems cooked enough.

I melted some butter in a skillet, added 3 wedges of cabbage, sauteed them a few minutes, then added about 1/2 to 3/4 cup water, a sprinkle of salt, and clapped on the lid. Turned down the heat to med. low and after only 7 minutes of cooking it was starting to burn. What am I missing here? Is this really rocket science?
