I'm going to try this recipe on Saturday, and wondered if there was too much syrup to whipped cream in terms of a ratio, and was also thinking...maybe it needs a bit of gelatin to help it set better? I do want the mousse on the "creamy" side, but not so creamy that it's like a thick liquid.
3 egg yolks
3/4 C maple syrup
2 C heavy cream
Beat egg yolks until lemon colored.
Heat syrup to boiling and pour very slowly into yolks, whisking continuously.
Cook maple-egg mixture over boiling water until 170 degrees.
Beat well-chilled heavy cream until stiff and doubled in volume. Fold in maple-egg mixture until well blended.
Fill parfait glasses, and refrigerate until ready to use.
Meanwhile, here's what I made this week: Raspberry Bavarian Cream. It used 1.5 Tablespoons of unflavored gelatin and I really wasn't crazy about the texture in my mouth and would have enjoyed more creaminess to it, but it set up nicely.
Thanks!
Smiles,
Sooz
