Doing It Backwards

Before I went to work this morning I got an e mail from a member. This person is going to participate in a high profile competitive food event.

Obviously in this type of events plating presentation is very much an important key to success. With the following ingredients for the recipe, I was asked to suggest some design ideas:

"The theme ingredient is limes. My plan is to make shrimp fritters (with jalapeno, ginger, and lime zest), along with battered and fried very thin lime slices. I'll serve the fried shrimp and limes over slices of mangoes and avocados, with a lime and guajillo chile drizzle, and perhaps a lime crema for dipping. ------I'm figuring on five shrimp and three lime slices per plate..."

This is kind of unusual for me, i.e. cooking backwards. I seldom start out with plating in mind before I cook. Anyway, I didn't have much time to shop for or to think about this. I wish I had more time. I hope what I have done will be helpful.
