Derby Day - what are you making?!?!?!?!

So the reality has finally sunk in. For the last several years there have been more kids in attendance than adults (much to my chagrin) and I have to make more kid friendly food than usual. I miss the days of a vat of Jambalaya, a few appys and a couple of gallons of Mint Juleps and everyone was happy! Life was so much easier then!

So I need suggestions for a few kid friendly foods. I will have a few dozen hot dogs (one family I invite has an interesting son... last year he ate 14 hot dogs and chugged a 6 pack of Coke on a dare, he's 11 btw) and some fresh fruit, chips, juice boxes, water, and store bought ice cream sandwiches and brownies.

I am also open to adult food ideas, the only absolute is Jambalaya (and Mint Juleps), there are people who talk about it year after year and how it is the best they have ever had.

I was also going to make:

Crab Canoe (hot crab dip in a hollow bread)

Hummus and pita

marinated veggie platter

deviled eggs

Sue's "crap cakes" (old CF joke there)

Ceaser Salad

Kentucky Derby Pie (Pecan pie with bourbon and chocolate)

Stuffed Strawberries

Help me out here gang - what else do I make for the kiddos? I know a few families will bring appy or dessert items to share, but I am worried about the variety and amount for 25 kids.

And PRAY for nice weather! If all those kids are in my house I WILL have a nervous breakdown!

Kids? You got it right the first time....hot dogs!
Oh you might vary the offering with little smokies....but...I mean what are you going to serve them? Salad????
I won't be doing a "derby day".....sigh....if the weather is decent....it will be an out door day!....with maybe a quick julep at race time. ( if there is such a thing!)
But I think I may have to get out with the hair dryer to try to force the mint a bit!!

GEEZ Linda! Hop on a Travelocity flight to Philly, I will pick you up Sat morning, party your butt off, spend the night (or two) and we will get you back to the airport in plenty of time for the next funeral lunch!

I would love to have a Julep or two with you!

My husband is from Louisville and while his parents were still living had a little house just down the street from Churchill Downs. We went to visit one year during the Derby because Robert said I needed to 'experience' it. Hah! What a zoo. I awoke at the crack of dawn to the sound of small planes, helicopters, the rumble of big tour buses and posh limos. Later, we could sit on the porch and watch all of the women prance by in their big hats and high heels...we applauded one or two! Those same ladies would come straggling back, usually hat and shoes in hand, lol. We watched the race on TV, but could hear the sound from the track. Pretty neat. And yes, Robert parked as many cars as possible in the yard ; the whole neighborhood did. Some sold hot dogs and cold drinks, too. This post was edited by rhizo_1 on Thu, May 2, 13 at 20:23

Karen, I have been wondering about your health these days. I don't like hearing that you are so uncomfortable. What do the doctors say? I'd don't seem to have a direct line to God, but you're in my prayers. If He's tuned in most nights, he hears my list and you're on it. Do keep us informed. You and I are on the same page when it comes to pink. The china (KPM "Normandie") that I used on the May Table was inherited from my mother. She had what she called a dessert set (square plates, larger than salad plates but smaller than dinner plates) and a large square bowl in the pattern for years. She LOVED them. Then, one day when she was in her mid sixties, she walked into a consignment shop and there was the whole set, place settings for 12 and a number of serving pieces. She thought she'd died and gone to heaven. For some reason, the store hadn't had any nibbles on the dishes and when she asked them to call the owner to see if she'd come down in price, she got them for a song. I use them from time-to-time now and think of her delight when she called to tell me about finding them. I think I have a little granddaughter that is going to be a "pink person" even when she's grown, so they will be appreciated again some day, in the same way my mama did. I think I've seen some of your horse collection. It's super. And aren't you the one with that wonderful merry-go-round horsie??? You could do a great Derby table without half trying. When you start to feel better, I'm going to start bugging you. Just start by slappin' down the dishes and settin' a few hoses on the table. Add a few roses (Run for the Roses?) and you're done! OA

I've never tasted a mint julep, always wondered how they tasted since you hear about them so much. I love to see the beautiful horses, but not one for watching the races. If I'm going to watch, I'd rather be at the track and see it all in person. Anyone collect horse figurines? Even a horshoe shaped floral arrangement would make a good centerpiece. Ah...the magic of the internet. Found them both. I have photos of both of these at home, too if you're interested. This first one is from Land O Lakes and is super easy. Really good, too! Southern Belle Bars Crust Ingredients: 1 1/4 cups all-purpose flour 1/2 cup LAND O LAKES Butter, softened 1/4 cup sugar 1/4 cup coarsely chopped pecans Filling Ingredients: 3/4 cup dark corn syrup 1/3 cup firmly packed brown sugar 2 eggs 3 tablespoons all-purpose flour 1 teaspoon vanilla 1/2 teaspoon salt 3/4 cup coarsely chopped pecans Heat oven to 350Â°F. Combine 1 1/4 cups flour, butter and sugar in large bowl. Beat at medium speed, scraping bowl often, until mixture resembles coarse crumbs. Stir in 1/4 cup pecans. Press crust mixture evenly onto bottom of ungreased 8 or 9-inch square baking pan. Bake for 18 to 22 minutes or until very light golden brown on edges. Meanwhile, combine all filling ingredients except pecans in small bowl; mix well. Stir in pecans. Spread evenly over hot, partially baked crust. Bake for 20 to 30 minutes or until filling appears set and knife inserted 1-inch from edge comes out clean. Cool completely; cut into bars. Sounds like a fun party! In my experience, kids usually take a few bites of their hot dog, maybe some chips, suck down several capri suns, and all the dessert. They absolutely love cupcakes and cookies-anything portable :)

As a native Louisvillian, here are a few traditional party favorites:
Hot Browns--they can be made into minis--and please don't use deli turkey.
Beef Tenderloin with Henry Bain sauce
Benedictine Dip
Derby Pie--a must!

You can Google the Henry Bain Sauce and Benedictine and get a slew of recipes.

I think of Jambalaya as kid friendly!! I think you've got it covered and it sounds like a great party.

I haven't even realized that it was this weekend. I've got a bumper crop of mint .... would somebody share a T&T julep recipe? I made some once and they weren't the greatest, but I'd like to try again. After all living in the Deep South, I think I should be able to serve a decent Julep!

If you want something besides hot dogs for the kids how about pork roll? Kids love pork roll. You need the same condiments as the hotdogs so you're all set there. Just need burger buns. The slices could be piled in a crock pot or electric skillet to keep warm. We buy the big 6lb Cases and slice it ourselves to make it cheaper, but slices would be fine.

Anytime we are serving groups of kids we have to include macaroni and cheese. There are some kids who only eat that for half their childhood. LOL.. But really, there are few kids that don't like it.

ACH!! Taylor Pork Roll!!......and there is none to be had anywhere in Iowa!!
Now I won't be able to think of anything else for days!!!
Thick slice.....on a flat top grill.....buttered bun also on the grill.....with mayo lettuce tomato and onion....

Are you sure you prefer Taylors? It's so salty that I can't use it any more. And I'm a pretty major salt consumer. Case's ships. Smiles. Hurry though, they stop shipping for the summer in June sometime.

Never had Case's that I remember....but I do remember the Jersey Ham on the boardwalk.....so I must have eaten it somewhere.
I really wonder why they don't ship it frozen to stores....but I guess their production isn't enough.
Lastnignt I went and looked.....and the mint is going gangbusters.
The worst hangover I have ever had was due to mint Juleps at a Derby party.
I think that's what turned me into a Scotch drinker...
Now to find out what Harry Bain sauce is.

The Hot Browns would be terrific, but since they are predicting rain (GGGRRRRRRRR) the house will be FILLED with kids of all ages and they will be getting on my last nerve. I need EASY at this point!.

I am also thinking the Crab Canoe and "crap cakes" may be too much crab and will probably substitute something else for the crap cakes.... It really needs to be a "do ahead" that I can just reheat (or serve cold). I am off to scout Malna's link for inspiration!

Thanks again everyone - and I have never had Case's pork roll either - I am going to have to look for it!

No matter what you serve it's going to be a great party, I just know it!

One party food I used to make for kids was meat loaf bites. I'd mix up a batch of meat loaf and fill mini-muffin cups half full. Then I'd add a cube of cheddar cheese and more meat loaf mixture, squishing it down to enclose the cheese. Bake at 350 for about 15 to 20 minutes.
I'd usually make ahead and refrigerate after baking. then reheat in the microwave and add a little circle of ketchup on top.
