Powdered eggs????

Planning time for the church's big kid oriented fund raiser.....the Ice Cream Social....where we serve hot turkey and sliced grilled pork loin sandwiches, beans, slaw, potato salad, home made pies and home made ice cream.

In the past it was made with raw eggs.....20 gallons or so of home made ice cream....with raw eggs! I had a fit because of the potential for someone getting sick....one egg in all the 20 or more dozen would take!

So wiser heads have prevailed and this year we won't use raw eggs....but would like to use the same recipe. pasteurized eggs are too expensive.....and the thoughts of making a custard for all those gallons and gallons of ice cream makes me dizzy!

Would powdered eggs work? Anyone have experience with powdered eggs and ice cream? or another recipe that doesn't require eggs?...although I can't imagine that it would taste like "home made icecream"...with the salt and the crushed blocks of ice.

Anyone have a solution to the problem?
