what the post::: what does 'mush' taste like:::reminded me of...

This post made me remember when:

when we were young that the best tasting

toast was made using a long handled

meat fork and opening one of the two

holes in the kitchen coal stove

and threading the bread onto the fork

and placing it near the hot embers to toast

and then turning the fork and toasting

the other side. Oh YUM.

Oh.. and we ate corn meal mush too !

and scrapple. We lived in PA.

Any one else remember this?

I love Scrapple. No one near here has even heard of it. I actually spent over 90.00 having six little packages shipped to me from Habbersett. I made those babies last for years! LOL

Can't afford to do that these days.

We ate mush fried with syrup on it, but never had cornmeal in a cooked cereal form. Didn't eat scrapple. But I -do- remember fixing toast on the old coal stove like you described it.

They might look awful but are probably just 'cosmetic' issues. Linda Lou has just stated all the same info I typed in. I recall a few short years ago when Linda Lou had not heard of Clear Jel, Pomona pectin, or Ball Pickle Crisp. Now she is a convert.. Pickles will reduce that shrinkage once they sit in the brine a few weeks. In fact, they are better tasting after a few weeks to a month later. I d hope you tasted the pickle brine prior to pouring into the jars. Relying on even eact measurements in a recipe can give you all kinds of results when first starting out. Always use Pickling salt, and good quality white distilled vinegar. I buy only the Heinz brand at BJ's and Costco and they are 5 quart bottles intead of gallons. Never had any problems with them. RIght now, seeing as its HARVEST time for many, I will seriously doubt if you an find the trie Pickle Crisp from Ball. Its usually sold out and comes in a small box with some foil packets inside. Its actually a food grade CALCIUM CHLORIDE and is used as a 'buffer' to reduce the long term acidic breakdown effects caused by vinegar. I bought a pound+ of it from the source below. Their product is the same but slightly courser than the Ball type. I use a heaping teaspoon instead of the regular teaspoon measure of Ball PC. With lots of pickles to can, you can use up the single Ball PC box in one day. If you do buy it in bulk, pour it all into a big quart canning jar with metal tight fitting lid. It soaks up moisture from the air and can clump if left out to high humitity for too long (takes just a couple of hours to get exposed to the humid kitchen air and it clumps). After it sucks up all that water, it will not even evaporate. They use the liquified product to de-ice airplane wings! Here is a link that might be useful: Bulk Foods

Yeah, CP. This is a 5 year old thread and the QUESTION is always new. The search for the " Best Tasting and the Most Sweetest .." tomato continue. This is a never ending thing. OK. My definition of good tomato taste is not "the sweetest". I like a tomato with a delicate balance of sweetness and acidity, with a juicy texture and nice color when sliced. I have a compost pile built on a bank and enclosed with old pallets. Each spring I take a shovel and a few pails and shovel the finished compost from the bottom of the downhill side. All year long I dump paper bags full of kitchen scraps and paper towels on top and also add weeds (with some dirt clinging to the roots) and garden waste. The pile never gets bigger and it never gets turned either. Each tomato plant gets a heaping shovel full of compost in its hole. And I was just out ringing them with 10-10-10. The soil is light and drains fast but the compost helps hold moisture. Tomorrow I'll run the sprinkler on the vegetable garden because things are looking a bit dry. If you believe that compost helps the flavor, then for you it's true. I'm a non-believer but I do think the compost helps the plant. After 20 years or so of following the above procedure, I'm getting a much bigger crop. The tomatoes are all indeterminate and are staked so that I can fit more plants in a smaller space.

"Mush is porridge", Kathleen says. Among the oatmeals, there's large flake, quick (broken flake), minute, and steel cut, that breaks the flakes into small chunks and there's more of a texture of pieces retaining their shape than with instant, and there's Scottish, which to me sems quite a lot like steel cut. Then there's farina, or cream of wheat, and another kind of wheat, and I've heard of one that's pretty well barley, but haven't tried it. And there's 3-grain, 8-grain (which I think is substantially similar to Red Diver Cereal) and 11- or 12-grain cereal, which latter retain a coarser texture when cooked. Which kind of porridge did you mean? This unlettered extra-northerner has to ask, "Does "mush" bear any resemblance/similarities to "grits"?". ole joyful

I've never made toast that way, but I remember in the Victorian Garden video series during the Victorian Kitchen DVD, the cook's assistant had to make toast that way. The cook used to work in big English estate houses and she remembered how rosy red her cheeks got while making toast for the family "upstairs".

My Dad used to toast his bread over the eye of the stove just a few years ago.

We had an old toaster that had an electric grill in the middle with a couple of doors, one on each side, which only toasted one side of bread at a time and we had to open the doors to turn the slices over to the other side. If you opened the door just right, sometimes the slice would turn over itself and one didn't need to touch it.

Really easy to burn the toast ... on one side or the other.

Automatic is better!

I inherited the kind of toaster you talk about joyfulguy when my mom died. It still works along with her coffee pot and waffle maker. I burned many a finger using that toaster until we went "modern" and bought a pop up toaster.

I was amazed when an antique dealer told me her waffle iron was worth at least $250 due to it's unique design. She couldn't have paid more then $25 or less when she first bought it.

But 25 Bucks'd buy a lot of stuff back when she bought that waffle maker.

In my first year of employment in 1953, I think that I was paid $1,900.00.
