Pie? Substitute for tapioca? (thickening)

I have apples. I was going to make my mother's pie, which is made with hard apples and isn't very sweet. It calls for a sprinkling of tapioca, but I don't have any! And I have to stick around here for biz so can't run to the store.

Any ideas? I don't have time to make it tomorrow...

I could make a different pie.

I have cornstarch, but that would be yucky, wouldn't it?

I suppose I could make a tarte tatin, but less firm, sweeter apples would be better than that.

I don't have any arrowroot, but I do have potato starch. Would that work, do you think?
