Pie? Substitute for tapioca? (thickening)

I have apples. I was going to make my mother's pie, which is made with hard apples and isn't very sweet. It calls for a sprinkling of tapioca, but I don't have any! And I have to stick around here for biz so can't run to the store.

Any ideas? I don't have time to make it tomorrow...

I could make a different pie.

I have cornstarch, but that would be yucky, wouldn't it?

I suppose I could make a tarte tatin, but less firm, sweeter apples would be better than that.

I don't have any arrowroot, but I do have potato starch. Would that work, do you think?

I think tapioca makes a pie yukky...I use cornstarch for cherry pie but flour for apple and bl7ueberry...guess I just like the taste flour gives....or am in a habit!LOL!
If you use either, mix it with a little of the sugar before sprinkling over the apples so it doesn't get in lumps.
Depending on how juicy the apples...about 1 T cornstarch or 3 T flour.

Well then, that must have been my problem because I did double the recipe!! I didn't realize you couldn't! I know you're not supposed to fool around with amounts in recipes so you keep the acid ratio correct, but where this was just strawberries and sugar and nothing else in the recipe I figured it was ok! I guess not! And I measured out 4 quarts of whole strawberries. The recipe was 2 quarts of strawberries and 6 cups of sugar. It didn't say to cut them or mash them before measuring - in fact (I'm remembering off the top of my head here as I don't have the book with me) it said to crush the strawberries one layer at a time and then to mix with the sugar, so it sounded to me like you measured the whole strawberries, then crushed them and that's what I did. I'm not going to fuss with what I already made - as I said, it won't go to waste as hubby will use it as pancake topping - we've even been known to plop a spoonful of jam in a bowl of oatmeal, so this stuff will work for that as well. But I'm glad I spoke up because for future adventures in jam, I wouldn't have known any of this and would probably have given up on it if I kept failing! And I thought it was weird that the jam recipe that used the pectin used an extra cup of sugar from the one without pectin. I've learned so much from just this thread - thanks so much guys! I want to take my next adventure into the realm of peaches! Peach jam sounds yummy and if I fail again, hubby does like peaches, so he'll have more pancake topping than he knows what to do with lol!! My favorite puddings are Tapioca and Royal Chocolate Fudge. I only like cooked puddings. I don't like instants that you just mix with milk. We have a pudding company in Long Island called "Cozy Shack." They make very good puddings, including Rice Pudding and Tapioca. My mother used to buy the pearls you have to soak. Too much trouble,I think.

How much - not sure, I'm going to have to wing it ;) I've made so many blackberry pies from frozen berries, I have an eye for how much Minute Tapioca I will need for a firm filling when I see how juicy those berries are when thawed and it's not always the same - 3 - 5 Tablespoons. Think I will just need to guess when I've opened a jar, I'll eat one, see if I get a feel for the plumpness. Did you find they cooked down much more with baking or had the canning pretty much softened them and released the juice.... I like a pie to cut in slices without running so may err on the side of too much first try. My closest TJs is an hour away but if its good I'll pick up more, will usually do Costco and TJs (about 10 minutes apart) approx. once a month.

Here ya go....re the notes....Mel Campbell was my father in law. Grandma Ann was born in 1870, was a farm wife and after her husband died ran a boarding house. Rhubarb Cream Pie 1 unbaked 9 inch pie crust...in a 9 inch pie pan 3 cups of rhubarb cut in 1/2 inch pieces 1 1/2 c. sugar 4 T. flour 3 eggs Add'l 6 T. sugar 1/2 tsp vanilla, pinch of salt, 1/4 tsp. cream of tartar Mix flour and sugar and pour over rhubarb in a large bowl, mix well , separate the eggs and add the beaten yolks to the rhubarb and mix well. Place in pie shell and bake at 375 for 1 hour until center is bubbly and crust is brown. Cool slightly. Beat whites, salt, and cream of tartar until soft peaks form, add the 6 T. of sugar in batches and continue beating until stiff peaks form when you raise the beater. place meringue on pie and bake 5 or 6 minutes at 425 until lightly browned. This is Grandma Ann Campbell’s recipe….Mel Campbell’s mother.

I never use anything but flour as a thickener in pies.

Oh! Goody! I have lots of flour!!

This is the only pie I make that calls for thickening.

LOLOL JC! I have used both tapioca starch and cornstarch as thickener. Didn't think they were too yucky. Of course, flour works as good only you will need more for the same purpose. I am waiting to see a picture of your pie!

Well...the Op said she thought cornstarch might be yukky....and I said I think tapioca is yukky...
Actually it's a rare pie that I don't snarf down with gusto!!

I also use flour as a thickener for all my fruit pies, I think cornstarch gives too much of a gelatinous consistency which I don't care for.

So, it's yukky to me, but not necessarily to anyone else!

yep, all of the above works as a thickener. My favorite is arrowroot, but I don't mind flour or cornstarch. I like tapioca in cherry or blueberry pie, I really like the way the texture works with those fruits, but not apple. But that's just me!

So then Mother is whispering in my ear that it should be small tapioca for this particular pie, and I was overstretched, so after all your kind help I decided I could forgo peeling apples and try to find time to make it Friday.
